Enough is said about David’s soaring popularity after appearing in 一饭封神 (China’s reality cooking competition). But before his onscreen popularity were the amazing-tasting plates at his neighbourhood joint called Neighborhood.
So, can a self-proclaimed Introvert be a Maverick at the same time? David is that perfect being. Now overlay cooking, you get the perfect cross between thoughtful and deeply personal flavours, with rule-breaking and rebellious ideas/use of ingredients. Exactly why people flock to Neighborhood, reasons why reservation books are as tight as #[instagram]%^*+
I never have a menu when I visit Neighborhood and David. Entirely left to him, it is what it is, whatever the market avails in the morning. Whether it’s unfamiliar seafood (which he loves playing with) or bloody delicious “just because”. Of course, if you like ‘safer’ options, there is a menu. If you do that, get that salt-baked chicken (which is probably the most popular cover pic for posts on Neighborhood) and don’t share the chicken…
Armed with two female friends who are super regulars themselves, I wedged into the second seating ready for the David Show. Seafood galore as usual, you can see for yourself. Goose Barnacles, local fish, alien crustacean, Bombay Duck, Godzilla Matsutake, and a Risotto made with everything that you never thought could be in a Risotto. How do you not like such a meal?! It brings up the naughtiness in culinary…
The toughest part of a visit to Neighborhood is to make it up the slope of Peel Street hungry and down tipsy.
You want to make Neighborhood part of your Hong Kong trip, it’s casual, delish and wicked! #noneedmeepok @davidtlai Less

Not your usual Neighborhood’s Salt Baked Chicken!
A 50 Best Signature Session with Chef Byungwook Kang @chef_nextk saw an infiltration of K-ingredients from Jeju into Neighborhood. For a couple of hours, Chef David Lai @davidtlai ’s flavour-forward styles got bolder with spicy and fermented tones; much to the delight of riotous Korean covers present!
The signature Salt-baked Chicken was wrapped with Kelp for this collab. Salt-baking retains moisture for succulence and improves texture, that precious Kelp from Jeju added savory and sea-brine, imagine the tenderisation and infusion. The local Chicken was served on top of delicious barley from Jeju, with lots of Jeju seafood - hand dived abalone (with its liver), and finished with house-made Kimchi. I’ve never seen a sexier “Chicken Risotto/Rice” or tasted one that intense at Neighborhood…
“Cold Bouillabaisse” - local seafood cooked in Korean fish soup and chilled… Deceptively simple looking but so tasty this Teochew Uncle had to pace myself with this opener and I was already hunting for some soju to make the experience.
A Jeju Black Pork (heukdwaeji) course! If you are a Pork connoisseur, you know a Jeju Black Pig. It’s unbelievable these pigs were used in latrines in the 1960s. Today, Jeju Black Pigs are prized for its fat distribution, fat (flavour) to meat ratio. It was ridiculous, look at slides 7-9, ridiculously tasty. David didn’t need to do much to it, just grilled!
For the many times I’ve been to Neighborhood, I’ve always appreciated David’s ingenuity and “I cook whatever I want”. This visit, bloody amazing to see what David and Chef Kang could do with K-ingredients!
K-love for Neighborhood has spawned aplenty (and will likely spawn even more - will share why in my next post); coveted seats to enjoy David’s “no menu”are even more coveted now.

As a headline event on the A50 official programme this year, @davidtlai went off ‘the list’ bringing to stage the lesser-known Korean farm-to-table @lastspring_jeju, run by the young @chef_nextk.
Their friendship goes back to the ‘Fish School’ era (circa ‘15) where Kang staged, returning briefly last October to cook at Neighborhood.
Kang is no stranger to David’s food. For this luncheon he flew 50kg worth of Jeju’s best to Neighborhood, bringing to life David’s ‘K-eighborhood’ dream.
Menu was a marriage of Hong Kong’s coastal charm, produce from Jeju’s finest farms and effortless classics served family-style on an etiquette-lessy messy table.
Rich plates, light banter. Being at Neighborhood is a reminder that food shouldn’t be taken too seriously.
David himself is a living example of this.
Dry bouillabaisse, dry as David’s humour and a classic Neighborhood opener sets the tone of the meal. Briny ocean depths meets the warm aromatic embrace of Jeju sancho oil, key to the heavens.
Next was the Korean Bo Ssam; it would be unjust not to give the prized Jeju black pig its own prime time spot. Nothing theatrical, or extravagant — just saucy fingers, mouths too busy to talk and a delicious Jeju spicy bellflower root salad.
Of all courses, giant grouper topped with a Jeju Perilla leaves chimichurri and kimchi powder takes the cake.
Warm roots and flowers salad with a Jeju tangerine dressing was similarly sensational, flirtatious aroma of truffle and oily richness of 4 years Jeju Iberico ham made a thrilling combination.
David traded his roasted kinki paella for an iconic steak and eggs @nongshimglobal ramyun, the tomato broth reminiscent of a HK-style borscht soup. He (half) jokes it would be his lifetime achievement to co-develop a ramyun flavour with Nongshim.
Fresh take on the familiar. Most visual and conceptually exciting was the Jeju kombu-coated 120 day old yellow chicken, the layer of sea green neatly intact between the skin and flesh served as an ensemble with kimchi and barley rice.
Meal came to a close with Kang’s modern-style ‘Bae Suk’, plump and sweet Jeju blueberries were made into a compote served with cooked pear and cream. Less
🇭🇰🌟A little photo dump from a recent revisit at MICHELIN one-starred Neighborhood with Chef David Lai 黎子安老師 @davidtlai.

Ever since Chef David Lai appeared on “一饭封神”, the China reality cooking show “The Divine Dish”, his popularity along with reservations for his hole-in-the-wall One Michelin starred Neighborhood, has shot through the roof!
Not that it was easy to book Neighborhood in the first place but it has gotten way tougher.
But behind all the glamour and stardom is still authentic David Lai, probably one of the least self-regarding Chef I know. It shows in his food and definitely one of the reasons why I love Neighborhood.
Counter for 1 this visit but I rallied the help of @hungry.bear.hk and @porabbitt , who dropped by to have their second dinner. I love the counter, you see everything, best vantage to people watch (more and more young people visiting Neighborhood) and you can stalk every dish that comes out of the kitchen, oooh so many Salt-baked Chickens!
I have ‘no menu’ at Neighborhood, because I love David’s “No Recipes”. It’s whatever David wants to cook and has available to cook. I am even happy if he puts scraps together, “crumb” dishes by the hands of geniuses can be a million bucks. But the quirky one always has something up his sleeves and I have tried some of his craziests.
David made a special Crab Pasta - Baked Tortiglioni (I think) with Hairy Crab topped with White Truffles. I know he loves to bake food but this was clearly an expansion pack, holy moly! Gluey with ocean-y flavours, the earthy musk as the shaves of white truffle melted. I shouldn’t get too used to this kind of Surf & Turf! Unsustainable.
Then came the main course - Paella Seafood from David with lots of Love! Or was it Seafood with a side of Paella? Bloody tasty, built right in front of you, every minute spiked the appetite. Simple but perfect, focused on making people happy - that’s food.
I was the envy of many likely-first-time diners who frantically flipped the menu wondering how they could have missed ordering it.
So ask me again, why I love Neighborhood…
Plan your visit to Hong Kong round a reservation at Neighborhood. It will be worth the trouble, David food is just ridiculous... #noneedmeepok @davidtlai Less

Baby squid sizzles in a vat of garlic , extra bread to mop up the juices is mandatory .
Buffalo wings with Roquefort smothered lettuce will hit the mark with devotees , I think the lettuce steals the show .
Garganelle with black pork ragu is a terrific pasta dish , the main components utterly unified .
Grilled pigeon is meaty and hearty and lightened with figs .

His food, sometimes exciting, curveball-ish; most times “what??”. This Shirako with Mac & Cheese tasted better in the mouth than on paper. Melty-creamy milt lushed up salty Cheese and coated the Mac so evenly. Don’t let your visual run wild please…
Just when I thought that Caviar-Marrow-Rubia Gallega during my last visit was a head turner, David cranked one up with a Caviar-Marrow-Hanwoo chunks (second pic) this visit. That glorious plate made ‘Hamilton to Ferrari’ second page news…
Beef Tartare with Clams (5th pic) - like a seabed sprouting clams? Iwashi spiked with Strawberries (7th pic), or was it the other way round? Ok, look at my “Crab Toast” (8th pic) - everything crab baked in crab shell stacked on toast - how insane and inspiring at the same time.
This is Neighborhood for you…
I sound like a broken record when it comes to Neighborhood, ain’t apologising, it is what it is. Surely I ain’t alone because it is tough to get a reservation, everyone wants a piece of David, his geekiness and “whatever”. #noneedmeepok

The biggest challenge doing this post was selecting the dish to helm it. Should it be the crazy“Potato and Crab Salad” (4th pic) that was 70% Crab 30% Potato, that ultra-sexy Shanghai Hairy Crab Pasta (6th pic), my cougar-love the Salt-baked Chicken (7th pic) which transforms into David’s signature chicken rice, or that Teochew uncle approved whole Kinki (9th pic)? You tell me if I did well…
Unreal flavours and textures in David Lai’s symphony. This “I cook what I want” Chef is branding his food stylistically, non-compliance nor conformance (with mainstream) are features. These turn rebellious diners on, very on.
Whether David intends a cult or be the cutting edge for an upcoming cuisine, he is achieving both. At the core of it all, “cooking for neighbours” (that’s why Neighborhood) means he can create anything he deems scrumptious and sincere enough for a convivial night with like-minded friends, family and rebels. Like the setting?
We talk about Vibe-dining over Fine-dining, Neighborhood is it. While other joints struggle to fill, David has troubles to sit everyone in his unlikely joint. It is tough to get your bum on those coveted seats.
Did I go crazy with so much food this round? Never enough. We told David, “leave it to you”, then strapped in. You should do the same for a real Neighborhood experience!
Your biggest problem will be “what was my favourite?”…

Boiled artichoke was a staple growing up , I wasn’t super fond of it as a kid and then grew to like it as an adult but the preparation was always so tedious . Thankfully all the work is done , the asparagus flower is paired with chicken liver mousse and terrific black truffle which packed a punch .
Seasonal poached shrimp are served whole and lightly dusted with espelette pepper , the sweetness shines.
Bone marrow is blanketed by a generous serving of caviar and served with luscious mashed potato , the combination of the three is pure luxury , and while I loved all parts , I would be stupidly happy with a big bowl of the potato purée !
I really enjoy Shirako with European flavours so combining it with raclette , thick bacon and boiled potato was sure to please .
I rarely have room for dessert here but seeing I was about to board a 15 hour flight where I was quite happy to skip a meal , dessert became irresistible.
French toast is a HK staple , here it has cracking texture resembling creme brûlée and is topped with ice cream and truffle . Decadent yet still pretty light . Less

Mussels were served with a light rockfish soup , again satisfying and addictive .
Local small fish were fried with a light dusting of flour and served with lemon and horseradish cream , the fish equivalent of eating popcorn .
Finally , the salt baked chicken - the 120 day old New Territories chicken is a great vehicle for this technique, the flesh is full of flavour and super tender. Chicken rice has plenty of chicken oil and soccarat . Plus a generous serve of Chicken offal is scattered thru the rice , I imagined chicken liver served this way would be dry and overcooked but that was certainly not the case , also chicken testicles are rather delicious . Meeting my visiting friend for a casual dinner here, my 7th and last visit of the year.
The highlights tonight were the carpaccio of Rubia Galega that was served alongside the roasted bone marrow and caviar, which was best taken on the sourdough. The salt-baked virgin mud crab was also nice.

Prior to this some quality Parma culatello, I used to be in the “don’t order charcuterie in restaurants because I can buy at home “ camp , but living in Asia getting quality charcuterie is easier said than done . This hit of salty pork is a great start to a menu .
Fried baby whiting with horseradish cream were crispy and addictive .
The lentil, coddled egg and caviar salad is a @davidtlai staple . The egg is the dressing and the backbone of the dish , the texture contrast between the al dente lentils and the caviar is fun too .
A complimentary dish of Japanese greens with amazing persimmon and Parmesan shavings was a terrific palate cleanser . Thanks to the kitchen for sending it out .
Finally a simplified Mille feuille rounded out the meal , the pastry was super crisp and lacquered , with cream and freeze dried raspberries adding points of interest .
Have booked Neighbourhood again in a couple of weeks , maybe it will be a couple of degrees cooler then ! Less

Neighborhood is one of those places I really miss when out of town. The menu changes everyday depending on what seasonal ingredients is available and David always manage to come up with new dishes that just works. Fried shirako here added creaminess and texture to the dish and the flavor reminds me of Chinese-style salt and pepper preparation

There are a few places that do good caneles, Neighborhood is one of them. They do a mini version as the final sweet treat. And if you are not into dessert 🤔, there are always some good cheese around. David knows his thing. Always the good stuff

The boss pulls out all the stops when Mr. Plotnicki comes to town. An amazing feast that threatened to put me in the emergency room of a hospital from having too much food.

As this place was highly recommended by a lot of international bloggers, I really thought I have to go there. After we have checked the menu, select basically every course on the menu, we tried to figure out why this location is hyped so much. The service and hosts are really great, but the food was disappointing for me. And also the... More

OK, it is in Central, the quality of the food was fine, but you will find hundreds of restaurants in Europe with the same style and quality. Maybe that is the reason.
