Lunch a while a go at ⭐️ @restaurant.mana in Manchester. I’m a big fan of this restaurant and having been several times I made the decision to put it on my recent UK tour.
This meal was tremendous and I think there has certainly been a little tweaking to really find the sweet spot recently. Still highly recommended and I look forward to hopefully showing off this gem of the North again next year.

The result is recognisable and respectful, with produce enhanced by our intervention. Fermentation and fire are the widest pillars of our kitchen. Flavours are bold, whilst textures are delicate.”
I really enjoyed the meal and could see him one day getting a second star as I’m sure he is gunning for. I think he plans to upgrade the restaurant sometime soon and really push for the second star. I’ll be back soon I hope.
