I don’t hand out superlatives easily.
After more than 20 years of independent restaurant writing and more than 210 visited three-Michelin-star restaurants, “great” has to mean something.
So here it is:
Plénitude in Paris is one of the greatest restaurants of our time.
Arnaud Donckele’s cooking is staggeringly complex, yet nothing feels complicated when you eat it. A garden of vegetables. A tomato tart worth traveling for. Sauces that seem to carry entire landscapes. A fish course I will remember for years. Dessert after dessert at the same extraordinary level.
Five hours later, I left Cheval Blanc after midnight with that increasingly rare feeling: complete satisfaction.

@plenitude.paris is one of those rare restaurants where everything feels exactly where it should be.
Inside @chevalblancparis , overlooking the Seine, the room already tells you this will not be an ordinary dinner. We were six, seated in the private room for a late 9 p.m. reservation, the kind of table that reminds you why this is one of the hardest reservations not just in Paris, but in the world.
The evening started with Krug, beautiful canapés, oysters, potato, truffle, warm bread, perfect butter, and the kind of porcelain, service, and attention to detail that makes luxury feel effortless.
But Plénitude’s real signature is the sauce.
Every dish feels built around depth, precision, and balance: blue fish with fennel and marigold, lifted by acidity; a tomato tart in puff pastry, presented whole and carved tableside; blue lobster with nasturtium and raspberry, rich, creamy, and unforgettable; turbot with caviar and a bouillon served alongside; red mullet with crab and saffron; and pigeon with herbs, almond, and every part treated with purpose.
Then came the cheese cave, one of the most generous and impressive I’ve seen, followed by desserts that could easily be their own reason to visit. The rose with candied grapefruit was light, aromatic, and beautiful. But the cocoa pod flower may be my favorite dessert of the year: layered, creamy, textural, and made for chocolate lovers.
Plénitude is not just a three-Michelin-star restaurant. It is the full expression of what a great restaurant can be when food, service, space, emotion, and execution all meet at the highest level.

In Paris, at 3-Michelin-starred @plenitude.paris in the @chevalblancparis hotel, Chef @arnauddonckele takes you on a journey from his native Normandy to the Mediterranean and back in a symphony of sauces.
Born in Normandy, he earned three stars at La Vague d’Or in 2013 before being poached by Bernard Arnault of @lvmh to open this institution.
The concept is genius: a menu built on sauces, the soul of French cooking. A sardine sauce with fish was undoubtedly one of the greatest I’ve ever tasted - intense, bright green, godly. The Garden plate presented like a Monet. Rabbit prepared three ways with sauce and vinaigrette, a technical masterclass, though served cold without clear purpose (to me).
But then the cracks appeared. A turbot served closer to cold than lukewarm, the first dish I’ve sent back at a 3-star for temperature alone. An herbal infusion made with pre-made tea bags. A kitchen tour showing pictures of Donckele everywhere except the kitchen itself.
It felt like visiting a Picasso museum to find only replicas. Plénitude is an impressive choreography with flawless service, but it follows the LVMH playbook: scaling more while decreasing quality. Michelin calls this the pinnacle of fine dining. On this night, it was not it.

To accompany this sauce, and not the other way around – for this is how @arnauddonckele at 3 Michelin Star @plenitude.paris at @chevalblancparis conceives his cuisine – comes a dish of gambero, radicchio and asaku (citrus hassaku, a Japanese hybrid of pomelo and mandarin). The sauce evolves and becomes more complex with each bite of the dish.
It set the tone for what followed: a succession of brilliant sauces with evocative names and the dishes that enhance them.
The grilled sardine for “Eden”.
The pheasant for “Harmonie Sauvage”.
The langoustine for the sabayon “Buisson Divin”.
The red mullet for the fumet de roche “Ocre Tannique”.
The poultry with truffle for the crème marbrée “Terra Botanica”.
The kiwi for the sauce pectinée “Agavos deliciosa”…
As I read his book on my flight home, I came across the words, “The important thing is not to impress, but to comfort”.

On Christmas Day, we return to Paris for our number 7 of 2024! Overall, our visit to the acclaimed Plénitude by chef Arnaud Donckele was one of the most complete experiences we’ve had.
When it comes to gastronomy, opinions often differ—there are supporters and critics, and not every type of cuisine suits everyone’s taste. Plénitude, however, is the exception to this rule. Everyone who has been here sings its praises, and I fully understand why.
If there were to be a blueprint for the ultimate three-star restaurant, this would undoubtedly be the prime example—a place where everything comes together perfectly, with the experience taking center stage. The fact that their menu revolves around sauce as the central theme makes it all the more fascinating.
Perhaps surprisingly, the dish that stayed with me the most was based on sardines:

the main reason of our trip to paris, one of the most sought after new tables of europe, fully booked for a whole year in advance. needless to say we had sky high expectations, it was a solid meal but won’t say that our expectations were met and deserves the hype and waitlist it has.
the focus here was on sauces, thats what chef arnaud is known for. using ingredients as a vessel to complement the sauce, and supplying us with a whole bowl of the sauces used for each dish for refills and bread mopping. we opted for their tasting menu instead of a la carte to sample all the ‘signature courses.’
my favourite of the night was their sardine dish, each element was done well, complemented with a cold tomato base sauce which felt minimal and refreshing. another dish i liked was the lobster with artichoke, dual of sauces, one with lobster butter and coral, other one as a slightly acidic sabayon complemented by the plump french lobster. rest of the dishes were normal, expected executions of a 3 star, if that matters. they aim to present lighter courses and flavours than average french fine dining but i found some dishes like the turbot still pretty cloying. aesthetic presentation of the desserts but again, pretty average in flavour.
box is ticked, solid meal with no wow factors whatsoever. knew it was expensive from its location but thought they went a bit overboard, including the wine list. definitely pretentious, definitely a splurge. i’d say worth maybe 3 months maximum of waiting, definitely not a year.

Fantastic dinner at Plenitude. Driven by their sauces which are incredible concoctions by itself.
The red mullet, the langoustine and the pigeon were cooked by great precision and tasted sublime.
