Excellent French restaurant on the tip of the Noto Peninsula. The Chef trained in Paris at Robochon and it shows. Solid technique, interesting combination of ingredients result in very tasty flavor profiles. His saba (mackerel) taco which you roll up yourself tastes fantastic. High acidity in the fish is paired with vegetables with different textures and dusted with olive powder.
The buri was seasoned for one week, for me too long, as it created an unnecessary softness.

The standout this evening was the duck with potato purée in Robochon style. Flawless and so tasty.
The wine pairing alternates between wine and sake, is well priced and quite good.
If you have trip to Noto, make sure not to miss this place. Sample the local lacquer ware and call ahead and order an extra portion of the Robochon purée.

L’atelier de Noto ラトリエ・ドゥ・ノト 1st visit — taking food trips to the next level: 2 hours delay + 1 hour flight to Wajima, the northern coastal town of Noto peninsula. I’ve always wanted to visit this relatively remote restaurant and finally made it. Most dishes worked well combining western techniques and local ingredients. First time trying the Noto115 shiitake, intense flavor and meaty texture, possibly the best (and most expensive) shiitake out there, although I’d prefer it by itself without the foie gras. Other highlights were crab risotto; amadai; and Noto beef. Overall a nice experience, worth at least one visit despite the location. •
