Tomidokoro is hands down my favorite spot for sushi quick fix as Sato Taisho’s skills and interpretation of neta are truly unique.
Sato Taisho sources most of his neta from Nozomi, a subsidiary of Yamayuki Group. Tomidokoro is hands down my favorite spot for sushi quick fix as Sato Taisho’s skills and interpretation of neta are truly unique.
Sato Taisho sources most of his neta from Nozomi, a subsidiary of Yamayuki Group. With all due respect, his neta might not be the most expensive ones but they truly stood out, especially the hikarimono and traditional netas. The anago nigiri with salt we added was my favourite, elevating the natural flavor of anago. I was equally impressed by the tsumamis as they were more complicated and well executed when compared to my previous visits.
I honestly recommend this sushiya to every sushi-lover. Trust me, if you go for the nigiri only lunch, you’ll be impressed by the cost performance ratio when you receive the bill.

Tomidokoro is one of the sushiyas that I would love to visit whenever I am in Tokyo. Customers are able to truly appreciate Taisho’s skills in terms of how to craft nigiris in a highly consistent manner and bring out the best from each type of neta.
Sato Taisho sources most of his neta from Nozomi, a subsidiary of Yamayuki Group. With all due respect, his neta might not be the most expensive ones but they truly stood out, especially the hikarimono and traditional netas. In particular, the acidity of Saba was spot on, went really well with the fatty finish. Sato San’s buri was the showstopper which was aged beautifully, bringing out layers of flavors and a silky mouthfeel. He also stepped up its sake game, the Jikon he offered was so fresh and appetising.
I honestly recommend this sushiya to every sushi-lover. Trust me, if you go for the nigiri only lunch, you’ll be impressed by the cost performance ratio when you receive the bill.

Nigiri all good. Some outstanding.
Sato san matches the temperature of the rice to the fatness of the neta. He ask the sous-chef to change the rice when he fills it needs a little higher temperature.

My November 2024 visit was packed with surprises including the lingering sawara [鰆] zuke-d with tamanegi [新玉蔥] shoyu and tender & meaty hagashi [剥し]. The otoro and buri were also aged beautifully to soften the texture and deepen the flavors.

The evening began with a selection of Otsumami, each dish a showcase of Chef Sato's innovative approach and meticulous attention to detail. The Hirame (平目) and Torigai (鳥貝), praised for their superb texture and exquisite taste, set a high bar. The Mejimaguro (メジマグロ), perfectly seasoned and served with a hint of Dijon mustard, was a brilliant fusion of traditional Japanese techniques with a touch of Western flair. The grilled scallop, with its slight spiciness atop, nestled in Nori, and the sea cucumber, dehydrated through a simple shake and served in a spicy ponzu sauce, were both revelations in texture and flavor.
The Nigiri course, comprising 15 servings, was a culinary symphony. The Shari, seasoned with Akazu vinegar, provided a powerful yet balanced foundation for the neta. The proportion between the neta and Shari in each serving was impeccable, ensuring that each bite delivered the perfect harmony of flavors and textures. Every topping was seasoned to perfection, further cementing Chef Sato's reputation.
Sushi Tomidokoro's commitment to quality, from the ancient varieties of Hokkaido rice to the meticulously sourced fish, was evident throughout the meal.
