🇯🇵 Tomidokoro 🇯🇵

Two things worth noting before you visit Tomidokoro in Tokyo:

1)The nigiri course always closes with anago in the classic nitsume style. Patrons may ask for the shio version — the cleaner, lighter seasoning lets the delicate, natural sweetness of the anago shine through far more clearly.

2)Lunch service is impressively efficient and still very reasonably priced. You can add extra tsumami before the omakase begins — just speak to the chef in advance.... More

Just this alone makes me feel a bit luxurious. This time, I enjoyed the sushi lunch course at Tomidokoro.Since it focuses on nigiri, you can really appreciate the craftsmanship in each piece. The quality of the fish is excellent, and the balance with the rice, the temperature, and the harmony when it hits your mouth are all meticulously done. There are no flashy presentations. But with every piece I eat, it’s consistently delicious. After trying many sushi places, I feel like I always return to this... This was my first visit.I ordered the lunch nigiri course.Since I had plans afterward, I requested cold tea, which turned out to be complimentary. I felt quite grateful for the attentive service, as they frequently refilled my cup and kept the table clean. As for the sushi, it was well-prepared with generous portions, and I was very satisfied. However, there were some small flies, which might be due to the restaurant's layout, and that was a bit concerning.Overall, I would highly recommend this excellent... TomidokoroI had the pleasure of dining at this reservation-only restaurant, which is recognized as a Tabelog Bronze establishment, where the chef, trained at Michelin-starred restaurants, prepares sushi. The large pieces of fish paired with the dynamic rice truly embody the essence of sushi, and I personally found it to be quite satisfying and delicious! While the chef initially had a serious demeanor, he became friendly and approachable as the meal progressed, allowing me to relax and enjoy my food.It's... It was my first visit in a while! Every piece of sushi was packed with flavor. The perfectly cooked sweet shrimp was incredibly tender and delicious. On this day, I heard they had Matsukawa flounder, so I ordered that as an extra. The thick, firm flesh was sweet and had a wonderful texture.~ Course Menu ~▪️ Lean Tuna ▪️ Medium Fatty Tuna ▪️ Sardine ▪️ Sea Bass ▪️ Mutsu ▪️ Bonito ▪️ Horse Mackerel ▪️ Sweet Shrimp ▪️ Simmered Squid ▪️ Kasugodai ▪️... We received excellent service, even as first-timers at the counter sushi. The sushi toppings were generous and satisfying. I think starting with lunch is a great way for those new to counter sushi to ease into the experience, so I highly recommend it.

14 pieces of sushi and tamago for JPY 15,000, tax included.Incredible value. However, perhaps because I visited after Sushi Gami, the quality of the ingredients was just average, with nothing particularly noteworthy (including tuna, torigai, sweet shrimp, and uni. I think a more aromatic nori would enhance the uni). The sesame mackerel was well-aged and paired nicely with the rice.On the other hand, the rice had a sharp acidity from the red vinegar that I found unappealing (not juicy, but rather astringent!?).Given... "I received an invitation to visit since I was able to make a reservation, so I made my way here."At Tomidokoro, I enjoyed the delightful sushi crafted by Chef Sato, whose personality truly shines through in his work! The sushi pieces were generously sized, and the rice was perfectly seasoned—soft yet flavorful, melting in my mouth with the freshness of the ingredients. The meticulous craftsmanship of the chef was evident in every bite, making it hard to stop eating. The service was friendly and... The chef, who resembles the CEO of a certain financial group, skillfully prepares sushi at a steady pace. For lunch, you can enjoy 15 pieces (including tamago) in just under an hour. The total is JPY 15,000, tax included. Overall, the sushi was delicious. The tamago was just to my liking, perfectly soft and slightly runny.

Tomidokoro is hands down my favorite spot for sushi quick fix as Sato Taisho’s skills and interpretation of neta are truly unique.
⁣
Sato Taisho sources most of his neta from Nozomi, a subsidiary of Yamayuki Group. With all due respect, his neta might not be the most expensive ones but they truly stood out, especially the hikarimono and traditional netas. The anago nigiri with salt we added was my favourite, elevating the natural flavor of anago.⁣... More

Tomidokoro is one of the sushiyas that I would love to visit whenever I am in Tokyo. Customers are able to truly appreciate Taisho’s skills in terms of how to craft nigiris in a highly consistent manner and bring out the best from each type of neta. ⁣⁣

Second meal there. Same result.
Excellent otsumami
Nigiri all good. Some outstanding.
Sato san matches the temperature of the rice to the fatness of the neta. He ask the sous-chef to change the rice when he fills it needs a little higher temperature.
Great place and good value.

Dining at Sushi Tomidokoro under the masterful guidance of Chef Koji Sato is an experience that affirms some of the most exquisite culinary gems are found in the most unassuming locations. Nestled in a quiet Tokyo neighborhood, this restaurant, devoid of a flashy signboard, is a testament to the idea that true quality and craftsmanship stand out on their own.

The evening began with a selection of Otsumami, each dish a showcase of Chef Sato's innovative approach and meticulous attention to detail.... More

Tomidokoro 冨所 2nd visit — really love this place for its consistent quality and good value. 6 seater counter only, the chef is very chill. Wide variety of otsumami (you can keep ordering if you feel like more). Akazu shari is quite strong on the nose but mellow on the palate. Great place for casual but good quality sushi. •

Sushi Tomidokoro 冨所 1st visit — a small cozy shop in a quiet back alley in Shinbashi area, casual atmosphere, chef trained at Sushi Shin (鮨真). Classic and skillful craft, a natural and pleasant flow from the first otsumami to the last nigiri. Akazu shari was powerful and dense, well balanced with the neta. Very reasonably priced and definitely above expectation. •
