Many top restaurants now offer a beautiful à la carte selection, and it’s fun to incorporate these into the dining experience.
At the end of this year, I had the pleasure of dining with Martijn Defauw at De Jonkman, and we happened to visit at just the right time of year to include the Hazenrug Harlequin (saddle of hare) in our menu.
Chef Filip Claeys is renowned for his classic preparations, and this dish was simply outstanding! Perfectly cooked saddle of hare served with two sauces whose blend created a harmonious spectacle, accompanied by fresh fries, cranberries, and applesauce.
A classic that left a lasting impression!

Revisiting de Jonkman after a few years of absence. Filip Claeys, the Owner/Chef started this place in the former hunt lodge in 2006, after spending his formative years at De Karmeliet and the legendary Oud Sluis.
Over the years he has grown and is now truly on his own. He sources most of his ingredients locally and even purchased his own cow, so he can determine when it is the best time to slaughter it for food.

His dishes are well constructed, with some excellent combination of flavours. The inspirations come from all over like a Paella with Chorizo and Norwegian lobster, something which when you read it not necessarily seems go well together but somehow he makes it work. The dishes are focused and the execution flawless.
A great place when in Brugge. Especially when one is looking for a great lunch.
