5th visit

Paulo Airuado keeps on pushing hard, he creates new dishes and refines some of his signature dishes.

The cuisine is modern and very flavourful. Most of the dishes are well calibrated and in their simplicity very powerful.

He must be on the radar of the Guide Michelin for a promotion to 2 stars.

Having visited @daterrarestaurant in London I really wanted to checkout @restaurantamelia in San Sebastián where Paulo Airaudo holds one ⭐️ Michelin and was also about to cook at the @oadtop100 awards that week .

Dinner a few weeks ago at ⭐️ restaurant Amelia in San Sebastián. Finally I am catching up to the trip to San Sebastián last month for the annual OAD (Opinionated About Dining) awards. The rising star of San Sebastian, the first non-native Chef to get a star in this city which has plenty.

A modern cuisine based on Paulo Airaudo's home country with European influences.

I would be not surprised if he gets second star soon.

Second visit at Amelia. Paulo is clearly pushing hard and developing his cuisine.
This restaurant is going places.
