Another visit to ⭐️⭐️ @restaurantamelia by Paulo Airaudo in San Sebastián. This restaurant just keeps going from strength to strength. We had a procession of faultless and stunningly flavourful dishes with strong influences from Japan. It’s great to see Paulo’s empire slowly growing in these tough times, with several openings in San Sebastián itself aswell as in Barcelona and a future three star I would think at the Four Seasons hotel in HongKong. Yes he’s a friend, but I do try to be impartial and not rave about a restaurant unless I do truly believe it’s worthy of a strong recommendation, as Amelia certainly is. San Sebastián’s very own Frantzén, and their next three ⭐️ I’m sure.
