The team is now in full stride and steaming along. There are not many more refined farm-to-table restaurants on earth. A well deserved third star.

It’s hard to convey in photos just how special the experience at @singlethreadfarms is. They’re doing amazing work. My two visits, a year apart, both rank incredibly high on my all time great meal list. The hospitality, attention to detail, and quality of food are all top notch. I highly encourage you to visit.

Second meal there, whereas the first one was the fourth official serving of the restaurant.
This time, the cuisine presented itself incredibly well calibrated and balanced. The dishes are interesting and flavourful. While the inspiration often comes from Japan it is well anchored in its local theme where most of the produce comes from their own farm.
I would not be surprised if this places gets a third star quickly.
