How many times have I visited this place? Initially, my father made reservations, and we would go together, even having private reservations at times. Eventually, I started making my own reservations at this memorable restaurant. I have been a huge fan of sea urchin since I was in elementary school! When it comes to Sushi Takamitsu, it’s famous for its "Uni-versal Studio," but there’s so much more to it. Of course, the sea urchin never disappoints, and I love that they serve four pieces each time. However, the quality of the other nigiri and appetizers is also exceptionally high. Everything is delicious! Personally, I look forward to the horse mackerel every time! The richness and umami, combined with the rice, create a wonderful harmony, making me think, "This is truly delicious!" every time I have it. It’s not just about flashy presentations; the fundamental sushi itself is genuinely delicious, which is why I keep coming back. Sadly, their operations in Nakameguro will end in July. I was truly happy to visit during their last month. I have many memories of various mishaps in Nakameguro... _(´ཀ`」 ∠)_ Haha Including those memories, this place is special to me! The champagne, white wine, and red wine paired beautifully with the exquisite sea urchin and grilled nodoguro (blackthroat seaperch). The melt-in-your-mouth squid and the karasumi (dried mullet roe) on mochi were truly remarkable. However, the smoked gobo (burdock root) with cheese was surprisingly addictive. Oh, and the initial oysters with abalone liver sauce were, of course, outstanding!

I made arrangements to visit this July, six months in advance, and secured a reservation through a booking service.Takamitsu is renowned for its luxurious presentation, featuring Hermes tableware and Louis Vuitton trunks. However, beyond the surface glamour, the quality of the fish was truly outstanding. The course consisted of alternating servings of appetizers and sushi. The abalone served at the beginning was tenderly cooked, with no unpleasant texture clinging to the teeth, making it one of the most delicious dishes I have had recently. The fresh eggplant and ankimo (monkfish liver) that followed were also of very high quality.Regarding the tuna, the chef explained that "summer tuna tends to lose flavor, so we intentionally use last year's tuna from Oma." Both the appearance and taste were of exceptionally high standards. Additionally, the chef provided fresh tuna from the current season for comparison, allowing me to clearly discern the differences in texture and flavor, showcasing the chef's thoughtful approach.Many visitors come here specifically for the uni, and I am one of them. I thought that by early July, it would already be at its peak season, but I learned that the best time is actually around August. Nevertheless, I was able to enjoy four types of uni that day. Among them, the "aka uni" from Ehime and Yamaguchi prefectures was a first-time experience for me. Upon tasting, a strong sweetness and fruity aroma spread in my mouth, with no off-flavors, resulting in a highly satisfying experience. If I could wish for anything, it would be to have even more varieties available.The service was exceptionally high-level, with attentive care for each customer's needs. I usually prefer to enjoy my meals quietly, so I was a bit worried about the lively atmosphere I had heard about, but the ambiance that day was very pleasant. The chef was also very approachable and down-to-earth.In terms of decor and tableware, this was undoubtedly the most luxurious sushi restaurant I have ever visited. However, perhaps due to the extensive collection of alcohol, the interior felt somewhat cluttered. I heard they will soon be relocating to a new venue, which I believe will further enhance the sophistication of the space.The selection of beverages is astonishingly vast, making it an excellent environment for those who enjoy wine, champagne, or whiskey. Final count at Takamitsu is 11 tsumami, 12 sushi, 7 uni, 6 pickles. That's a lot of variety for one meal, definitely enough items to rival any of the Sushi Sho disciples. But Yasuda-san's style stands on its own. Aside from all the uni and display of luxury brands, the impact is delicate and upscale without feeling innovative or non-traditional. Despite the small sushi size (a necessity with this many items), the heavy aka-shari also packs quite a punch.

Maguro alongside uni is truly what shines at Sushi Takamitsu~
One of the best and most atypical sushi shop in Tokyo!A must go for sure!
Format at Takamitsu is "Sushi Sho" style, with small appetizers and pickles between nigiri and, of course, all of that uni. The ankimo narazuke maki has to be a direct reference. Appropriately, the nigiri are sized smaller, and no less than 4 items (including the ohagi with caviar) feature tuna from Yamayuki. No question that this course encourages pairing the bites with nihonshu. While the overall vibe is "modern luxury," Yasuda-san's approach to nigiri presentation is quite traditional.
On this evening the regular course had 7 uni - 3 aka uni, uni risotto, and then this trio. They are interspersed throughout the meal and reappear almost at random, sort of like the head melody in a long jazz piece. I can understand why Yasuda-san emphasizes so much uni - the quality here was exceptional for every variety that was served on this night. In this picture there are murasaki, bafun and ensui (seawater preserved) sea urchins, all with completely unique flavors and richness.

Is this garish? Many, many sushiya and high end washoku pride themselves on serving on vintage @baccarat plates and glassware (@sushi_ikko famously has glass Baccarat vessels for his shoyu). This isn't very different. My take on all this is that as long as the "show" doesn't disrupt the pace or quality of the food, it's all fun. Yasuda-san knows his audience, and is in on the joke - he quipped that he needs to wear Hermes because other scarves give him a headache 😂. Maybe someday there will be a taisho whose staff wear all Balenciaga, like they're about to attend a staff meeting on the Death Star. Less

What I do remember is that all three varieties were absolutely pristine in texture and flavor, with distinctly different notes of sweet, smoky, and briny flavor. I am pretty sure the one on the right (with the most nondescript box) was my favorite, coming from the Yamaguchi area. This was a type I only had the opportunity to enjoy once before when I was in Kokura back in 2017, so it was pretty special to encounter it again. Less

The courses are unique and interesting with my favourites being the bafun uni and white truffle rice, the black-throat sea perch and his amazing chutoro. The perch nigiri was insane - grilled, fatty and super tender, it melted like butter and the two types of vinegar in the rice really completed the bite. Yasuda Takamitsu is an incredible sushi chef. Knife work was wild. The LV luggage he is famous for displaying his produce on was a gift from one of his regulars and it takes pride of place on the counter. Well balanced shari and top choices for neta. Chef is super focused and a really nice guy. Uni is crazy here.... I think someone needs to open a Cucinelli sushi-ya.......
