Truly unbelievable piece crafted by @hide.namba this fall in Tokyo!
It’s not often that I have sardines, even in Japan. I used to hate this fish when I started my sushi journey, now that has some Iwashi crafted by experts I can’t deny how good it is when it’s well prepared!

I had a lot, like a lot of ChuToro pieces in 2024. Yet I think this nigiri made by Kazunori-san at Sushi Akira was one of the best, the rice flavors mixed perfectly with the amazing fatty and deep taste of the tuna. Creating a perfect texture. Sushi Akira is always amazing! Looking forward to go back in May!
