Amazing piece of Iwashi (sardine) at Hakuba Paris. It’s difficult to find good hikari mono especially in Paris. So having sushi a high quality Iwashi Nigiri was a pleasure.

Once again well done Hakuba for exceeding our expectations.

Delicious Toro nigiri with sea salt. A piece @takuparis has been doing for years and I love it so much. I feel like Toro with salt create a whole different experience than with soy sauce. He achieved impressive balance on that piece with that delicious Tuna from spain.

Shota Komine has been trained at Sushi Mitani in Tokyo, one of the best sushi restaurants in the world.

We are lucky to have him in Paris! Now he works alongside Takuya Watanabe at Hakuba, one of the best sushi restaurant in Europe.
