This is my 10th visit.The balance of everything in the sushi is exceptional.As usual, after going through the course, I enjoyed a lot of additional dishes.They even kindly accommodated my requests and prepared octopus and abalone for me.Once again, it was a thoroughly satisfying experience.If I go for sushi in the future, Sushi Suzuki in Ginza is my only choice.

In famous establishments of this caliber, it’s not uncommon for customers to feel a bit uneasy, but here, the chef and his wife were friendly and personable, making for a wonderful experience.I have only had a few experiences with non-conveyor belt sushi, so I can't really judge the taste or cost performance. I visited Sushi Suzuki in Ginza, where most of the customers were foreigners.This time, I enjoyed a full course of nigiri sushi from start to finish. Each piece showcased meticulous craftsmanship, and the balance with the rice was exquisite. The simplicity allowed the deliciousness of each piece to shine through.The sushi was served at a great pace, and before I knew it, I had finished everything.It was a luxurious experience where I could fully savor delicious sushi. ✨It was a great meal! ♡

I was mesmerized by Chef Suzuki's incredible skills. It was truly impressive! Here are my impressions of the meal. The ingredients were, of course, top-notch, but the rice was exceptionally delicious. It was a blend of red vinegar and rice vinegar, and the umami flavor was outstanding. I lack the vocabulary to express it fully, but the balance between the fish and the rice was remarkable, making it "incredibly delicious" sushi. We had: - Cold Oolong Tea - Aori Ika (Baby Squid) - Hirame (Flounder) with Kombu - Isaki (Chicken Grunt) - Akami (Lean Tuna) - Chutoro (Medium Fatty Tuna) - Otoro (Fatty Tuna) - Kohada (Gizzard Shad) - Ebi (Shrimp) - Bafun Uni (Sea Urchin) - Hamaguri (Clam) - Anago (Sea Eel) - Toro Maki (Fatty Tuna Roll) - Tamago (Egg) - (Additional) Toro Hosomaki (Fatty Tuna Thin Roll) Personally, I especially enjoyed the Bafun Uni, Aji (Horse Mackerel), Toro, and Toro Hosomaki. Located within walking distance from Yurakucho Station, BRONZE Sushi is listed among Japan's top 100 sushi restaurants. Reservations can be made through their website. For lunch, I opted for the nigiri course, and the quality was evident right from the start with the flounder and golden eye snapper. The chef's warm personality stood out, and he seems to be very well-loved by regulars, while also being incredibly kind to first-time visitors.
The first Kinmedai (golden eye snapper) was incredibly delicious. The thick slices of abalone steamed in sake are something you can only find here. The Hiragai (flat shell clam) was also thick, probably about three times the usual size. The tuna had a wonderful balance of fat and acidity, and the sea urchin was beyond words. I find myself craving this at least a few times a year.

The sushi here are big! Seasoning is simple and traditional. Lunch is nigiri-only and quite the deal.

Suzuki-san has been running his own shop in Ginza for more than a decade now, but his training at Sushi Aoki in the same neighborhood are as strong bona fides as anyone can get. The sushi is large sized and the rice is strongly seasoned with a much higher proportion of akazu than many other contemporaries. Ingredient quality is high and occasionally, exceptional.

Suzuki-san has been running his own shop in Ginza for more than a decade now, but his training at Sushi Aoki in the same neighborhood are as strong bona fides as anyone can get. The sushi is large sized and the rice is strongly seasoned with a much higher proportion of akazu than many other contemporaries. Ingredient quality is high and occasionally, exceptional.

Suzuki-san's bozushi is one of the best "edomae" versions to be found anywhere. There is stunning visual, textual and flavor contrast between the sour rice, rich saba, lightly torched skin, and sweet shiroita konbu. While a few high end sushiya (most notably, Sushi Saito) have incorporated bozushi into their course, Suzuki-san's might be my favorite in Tokyo. Less
