Fantastic meal at El Molino. David Yarnoz, the Chef/Owner really raised his game since my last visit 4 years ago.
Well constructed dishes, very creative with unusual combinations. Most of them are done in a very traditional way, although he mixes in the odd molecular dish, like the Salmorejo nitro. However all of them use great ingredients and are executed to perfection.

I cannot wait to come back soon.
