Highly regarded sushi restaurant in Sapporo from a young chef who learned the craft from his father. The quality of the neta is excellent with a medium vinegared shari that gets a touch stronger as we progress through the meal. The balance of the shari to neta was actually my least favourite point of the meal even as everything was positive. Individually, the components were great, the service was onpoint and the atmosphere is awesome.

(SWIPE FOR MORE PICS) This was the nigiri of abalone from Kyoto topped with aka uni from Obama in Fukui Prefecture. Because both abalone and uni eat kombu hence they are often believed to be very well matched with each other in Japanese cuisines, you will see this combination often in kaiseki or kappo. But together in a nigiri sushi is not common. And for aka uni which is only available for a few weeks in summer to match with abalone is even more rare but utterly delicious

The one by Kudo san in this meal in August 2019 was one of the best versions of such pairing. I had the same sushi in June 2019 with abalone from Yamaguchi and aka uni from Kyoto and the August one was superior. The aroma, sea flavor, the texture, everything was sensational. Definitely #littlemeg_best2019 .

My favourite place for sushi in Sapporo. It is a must when you go there.
Junya Kudo is arguably one of the best sushi chefs in Japan. He is obsessed with ingredients, tries to purvey some unusual fish, source locally without being dogmatic in doing so. He displays a technique which resembles movements of a ballet dance rather than those of a chef. His knife skills are stunning and application of his soy sauce a joy to watch.

One example for his drive to source the best was the bonito we got. On very rare occasions a bonito thinks he is a tuna and starts swimming with a group of them. Of course they swim much faster than he normally would do, so they force him to go beyond his natural speed and therefore transform his muscle. There are less than 1% bonitos doing this but it is worth waiting to taste it.
