This places will remain one of my top Kaiseki places in Japan. The skill of Maeda San is extraordinary, his flavor profile so prefect that I think he could serve me recycled plastic and make me love it.
Every dish has some added acidity in a very subtle way which changes the flavor without overpowering the core ingredient. It takes a fine calibrated palate to always hit exactly the right amount. He thus creates a very modern taste profile without loosing the tradition of a Kyoto... More

Fourth visit to the truely great restaurant. 14 servings all of them superbly sourced, carefully treated and the flavour component perfectly calibrated. Not one luxurious ingredients (if you disregard abalone) but just sublime craftsmanship.
This young, very humble and kind Chef will become a super star in his chosen profession.
Second visit to this little place deep in the Gion district. There is no photo policy but the food of Chef Yujiro Maeda is of so extraordinary quality that one does not need photos to remember.
This menu, as in season, was dominated by mountain vegetable, bamboo and nacho peppers. His grilled fish, succulent with scales to add texture. His dashi of a delicate fragrance, that one wants to ask for more.
Fantastic, a true three star, well done Guide Michelin to elevate this place.
