in shimabara, japan (aug’24)

made it to what feels like the edge of japan after a whole morning of travelling into shimabara, nagasaki. a city that feels like we were transported back in time. serving hyper-local ingredients in particular seafood around the shimabara bay, with ingredients straight from his father’s fish shop next door. with very clean cooking, highlighting and maximising the natural flavours with the most beautiful presentation to match its scenery.

Takahiro Inoue lived his whole life on the Shimabara Peninsula, apart from a short stint as a cooking school in Osaka.
He opened his current place up 3 years ago. His initial Italien influenced cuisine evolve rapidly. Another example that Chef cannot resist the siren lure of the Japanese food culture.
He now focuses on local dishes which he refines and adopts. The execution is flawless which is extraordinary as he never has cooked with a mentoring master.

Another one of my absolute favourite places. This is a place which defines the culinary experience imo, almost putting you in a surreal space where the nature, sea, serenity are just outstanding. One of the most simple but stunning restaurant settings and every dish executed to perfection. The octopus dish was just incredible. So simple and refreshing. Not many comparable places in the world.. max BOOM level for me.
