Unico 1961 — fresh and youthful, thanks to its evident VA to a certain extent (in a good way, not intruding at all). The vibrancy also brings out the fruit purity and structure of the wine, still got decades to go.
Unico 1966 — a bit tired compared to the 61, fruit profile is quite tertiary. Finish is a bit short for a wine of it caliber.

The cuisine is a perfect marriage of the traditional and also the highly creative where chef Hilario Arbelaitz uses high quality seasonal ingredients to produce dishes that remember the roots of Basque cuisine. Zuberoa used to be the gold standard in San Sebastian. It is still very good and it has adjusted to modern taste and style. The cuisine is solid and the combination of flavours well calibrated. it used to be 2 stars and is now a 1 star restaurant. I agree with this assessment.
