Rasmus Kofoed, the master of perfection.
This meal had a surprising number of new dishes, one better than the other. Combined with some of the old time classics, it became another extraordinary meal.
The stand out of the meal was the chicken dish which is absolutely next level.

The set-up forces them to bring a lot to the table and do quite some plating there, which makes it a very interactive experience.

Super cool and zen like restaurant in earth colours , where friendly staff serves refined dishes in earthenware.
The tasting menu consists of constructed dishes with some delightful flavour combinations. They are all perfectly executed and the composition of the menu is excellently orchestrated.

Two other great dishes worth mentioning is his Saba (mackerel) with asparagus which is an surprising combination but works very well and his Hokkaido Scallop with Shio kombu and Pomelo. The barely cooked scallop is inside a very thin pasta and thus creates a wonderful buttery texture. Less

Semmon Hiyoko prepares steaks for over 50 years in a very small building which one can only describe as a shed. His menu which consists of a one course meal has not changed together with the entire kitchen equipment.

Semmon Hiyoko prepares steaks for over 50 years in a very small building which one can only describe as a shed. His menu which consists of a one course meal has not changed together with the entire kitchen equipment.
Once you arrive, you get unceremoniously served a glass of water and a small salad from the only helper in the kitchen. At the same time Mr. Hiyoko starts preparing your steak, which is generously sized at around the 400g.
He grills the vegetables and the steak on the same griddle. Once done, he plates the dish and cuts the steak so you can eat it with chopsticks.
The meat is unbelievable smooth without being too soft and it melts in your mouth. The flavour is strong without any hints of very long age.
Unbelievable!
All in, he turns you around in less than 45 minutes without you feeling rushed in any form or shape.
What a treat! Go there as long as Mr. Hiyoko still cooks. Less
