Spring menu at Iida. As always precise, thoughtful and delicious. Exclusive ingredients cooked gently to perfection. A phenomenal layering of flavors releasing plenty of umami.
This place is impossible to book, it is small and very, very good. A few years ago they got 3 stars in the Guide Michelin. Then the telephone avalanche started. People trying to bully their way to a reservation. In the end Mrs. Iida asked the GM not only to remove the stars but to remove their restaurant from the Guide at all. Since then, she says, peace has returned and they can go about their business as they used to. They don’t really need to worry about filling the place up, normally you have to submit your wishes in August of each year, not for the next year but for the year after. Of course there is no credit card or deposit needed, only an entry with a pencil into their diary even though the reservation might be more than 2 years in the future.
Only in Japan….
ps: The pictures show only the first part of the meal as one is only allowed photos if on is the only guest in the restaurant. Once the other guest arrived I had to stop making pictures. Less

One table restaurant with one Chef who does everything from shopping to cleaning. It is more like eating in someone’s kitchen then in a restaurant.
The dishes are simple and delicious, well calibrated. Great to go with a group of friends and have a wonderful evening with great food.

Destination Restaurants is a list of Japan’s best restaurants published by The Japan Times. Started in 2021, the list is selected by Japanese experts with an international audience in mind. Our three judges from last year, Yoshiki Tsuji, Naoyuki Honda and Takefumi Hamada, are back again and have selected 10 restaurants from all over the country.
The selection criteria dictate that restaurants can be of any genre and located anywhere — except in “the 23 wards of Tokyo and any ‘ordinance-designated city’ (designated cities with populations of 500,000 or more).” Tokyo is renowned for having more Michelin-starred restaurants than any other city in the world, and the designated cities also boast fantastic dining options. But for Destination Restaurants those locations have been excluded because “the real expression of Japan’s land and climate is to be found in its regional areas, and not its cities.” The judges are also unanimous in believing in the value of “unearthing those unique talents that tend to get lost in regional areas” and that a regional-focused list provides an “alternative to the usual popular selections.”

The Sushi Sho group has been a powerful presence in Tokyo's sushi scene for the past few years.
Chef Nakazawa, whose name is well-known across Japan as one of the most respected sushi chefs, secured his firm grip on the heart of Japan's cooking scene with his unique style, refined over many years of trial and error. His unique techniques are as follows: 1) Use cured (aged) fish; 2) Offer both nigiri sushi and side dishes; 3) Use either red or white vinegar seasoning in rice depending on the fish being prepared.
Unfortunately, Chef Nakazawa, the head of the Sushi Sho group, has left for Hawaii on his mission to "recreate quality Edo-mae sushi using fish from overseas," but you can still enjoy the new standard for Edo-mae sushi set by "Nakazawa Ryu" in the restaurants of his apprentices across Tokyo.

Chef Nakazawa, the legendary sushi master who pioneered things like going fish, using different vinegar seasoning for various fishes and offering otsumami, left for Hawai a few years ago, but his former second in command mans the counter as well as the master did.
This is a casual, high end sushi restaurant wher one can still order a la carte.

Delicious lunch outside very close to the beach. The food is not avant-garde, but super solid and delicious. A very soldi two star place with some excellent ingredients and flawless execution.

Precise cuisine with some very delicious flavors.
