A couple of hours northwest of Bilbao near the Spanish coast and flanked by epic mountains, is this gem. When one of the first dishes that arrives with a combination of angulas, kokotxas, caviar and pil-pil sauce, it is hard not to love this place. This restaurant sits inside an old converted farmhouse with stunning views of the surroundings....it was easy to get lost in the serenity. Awesome place.

Aspic de llampares, Coliflor y Codium: Savory sea snail aspic with cauliflower, codium, and umami-packed flavors.
Chuletón de Mar Cantábrico: Thick Cantabrian fish steak with exquisite seasoning and grilled perfection.
Champiñón Levadura, Calamar y Bosque: Earthy mushroom yeast paired with tender squid and forest aromas.
Jugo de Malz y Azafrán, Fabes, Patata y Perfume de Chorizo: Malt and saffron jus with beans, potatoes, and chorizo aroma.
Paloma Asada, Jugo Tiemo y Aceite de Miguera: Roasted pigeon served with rich jus and umami-packed miguera oil.
Solomillo de Vaca Frisona, Tubérculos y Mantequilla de Codium: Tender Frisona beef tenderloin with root vegetables and seaweed butter.

Overall I enjoyed my experience at Casa Marcial. There were a few highlights and I liked the fact that it was not the same as what you get in other fine dining restaurants in Spain. There was a clear effort in showcasing the produces and season of Asturias, which can be rustic and simple and some combinations might even sound eccentric. But most of them came out surprisingly well matched. I do think it is not as easy to grasp as placed that offers extravagant ingredients and some flavors were quite strong. I would say it is place for more advanced diners who have had enough experience in Spanish new cuisines to fully appreciate its uniqueness and approaches.
