In picturesque Deidesheim, in the Pfalz wine region, L.A. Jordan at the Ketschauer Hof hotel is Germany’s newest three-Michelin-star restaurant.
The “L.A.” has nothing to do with Los Angeles, even if the name inevitably suggests it. Chef Daniel Schimkowitsch’s cooking is strikingly product-driven, with ingredients one would more readily expect in major international dining capitals than in a small wine village in the Palatinate: expect, for example, king crab with Koshihikari rice and N25 Oscietra caviar, olive-oil-poached sturgeon with frog’s legs, truffle and Kaluga caviar, Kinmedai with roasted fish jus, and an extraordinary langoustine from the Faroe Islands.
The food is refined, focused, and often world-class. What the restaurant ultimately shares a little less with L.A., however, is another story — and part of my new review. Link in bio.

Japanese cuisine outside of Japan is often at its best in major cities — from Los Angeles and New York to Paris and Hong Kong, there is no shortage of places offering remarkable precision and authenticity.
That was also my thought when I spontaneously booked one-Michelin-starred Murakami for my final lunch in São Paulo. Instead, the akami was watery and metallic, the shrimp tempura neither hot nor crisp, and the nigiri lacked any of the precision I associate with serious sushi. A good uni temaki was one of the few brighter moments.
This was an unexpectedly weak meal — and one that left me wondering how Michelin arrived at its star.

Nearly six years after my last visit, I returned to Kadeau in Copenhagen — now newly awarded its third Michelin star — for a menu devoted to the restaurant’s Growing Season.
The cooking remains unmistakably its own: deeply rooted in Bornholm, quietly original and remarkably attentive to texture and temperature. Highlights included smoked squid with Annabelle potato, kombu and magnolia; barely chilled tomatoes with herbs and nasturtium; raw scallop with sweet onion, hazelnut and quince; and an extraordinary four-part study of langoustine with plum, saffron and flowers. Even the simplest compositions revealed an astonishing degree of thought and precision.
Not every course was equally convincing, and the price has become impossible to ignore. Yet this was still an overwhelmingly superb meal — full of originality, surprise and understated beauty — and one that already makes me want to return for Preservation Season.

Back at @restaurant_klinker in Hamburg after a rather long absence — and quite a lot has changed. Dinner yesterday was very tasty, built around enjoyable bold flavors. The wine list, meanwhile, has improved so much that it was what lured me back in the first place. Just please don’t drink it dry before I return.
