Ramen place from the Edo Kobayash empire. Nothing in comparison to the Tokyo places but astonishingly good.
Most surprising was the number of people in the kitchen. In Japan this would be a one man restaurant, here there were 6!

I used to go there a lot, I love this place but have not been there for years. I forgot how much I missed it. Now that I know, I had to catch up and went there twice in the last 6 months.
Peter Goossens, the doyen of Belgian fine dining, the man who put this country on the map, the man who taught the framers what to do, the man who created his own ecosystem in order to provide his guests what he thinks they deserve.
After all those years he is going strong, introducing new flavours, changing his complete menu four times a year. Executing his menus with precision which shows his love for his profession and his craft.
I only can hope that he will stay where he is for a long time to come. Less

Farewell dinner to HJ in its old form.
Living in London for over 20 years made a trip to Brugge very easy, so I have been following this journey since the early days in the old location.
It is with sadness to see this place close, home of very good memories and excitement to see how the new format turns out.

This place seemingly comes out of no where. Obviously it had 2 stars but I had never heard of it nor do I know anybody who has been there. It came onto my radar only when the Guide elevated it this year to a 3 star level.

This place seemingly comes out of no where. Obviously it had 2 stars but I had never heard of it nor do I know anybody who has been there. It came onto my radar only when the Guide elevated it this year to a 3 star level.
The restaurant is housed inside the Hotel & Spa du Castellet complex which is close to the F1 circuit and international airport and surrounded by stunningly beautiful gardens.
The dining room is minimalistic with a quirky surprise, there is no cheese trolley but a cheese room, so if you choose to have cheese you will be asked to go into the room with a waiter and select your cheese instead of the cheeses come to you.
The cuisine is Mediterranean and not unexpectedly heavy on the fish side. Our menu contained some unusual fished like Vive (weever) and Dentex, but also common ones like Mackerel Catfish and Red Mullet.
With the exception of the Red Mullet the execution was flawless and the flavours strong and sometimes surprising. The Langoustine (from the Atlantic) was the absolute highlight together with the Artichoke in a very light curry sauce.
The service was exceptionally friendly and professional with the exception of the sommelier who tried to steer us always into the most expensive wines.
A very pleasant meal, clearly on a 3 star level in some of the most beautiful surroundings close to Marseille.

Of course Andy and I had to sweep up the new three stars in France, Marc Veyrat and Christoph Bacquié. And between those dinners we had to go to the only female French 3 star Chef, Ann-Sophie Pic as it was on the way from one to the other.

Of course Andy and I had to sweep up the new three stars in France, Marc Veyrat and Christoph Bacquié. And between those dinners we had to go to the only female French 3 star Chef, Ann-Sophie Pic as it was on the way from one to the other.
After a somewhat disappointing lunch 2 years ago, this time everything was impeccable. Maybe because La Maestra was in the house, I don't know, but we had a wonderful conversation with her about her culinary approach to classic French cuisine.
As we were in between 2 large meals we choose the shortest menu with the additional langoustine dish.
Every single dish was perfectly calibrated, had the necessary acidity and some excellent flavours. Needless to say that the technique was flawless as one would expect in a house of this caliber.
One dish was the clear stand out of the meal. It was so good, that I had a hard time to get my half of the dish from my lunch companion: The apricots dessert with the very first apricots from the valley. Sheer unbelievable, the composition and the texture, the sweetness with perfectly balanced acidity. Next level! Less

The Master is at it again. After a ski accident and a fire which destroyed the house of his birth, he wanted to know it again.
So he built a little village on top of a mountain pass in the Alps, surrounded by gardens where he grows herbs.

The location is for sure now very exposed but beautiful with vistas to mountains kilometres away,
The food however is lacking and not really up to a 3 star level, perfectly pleasant but not up there (yet). As usual in France they kill you with their desserts. There they don't even pretended any pretext and just called it "l'avalanche". Less
