Our extraordinary culinary journey at "La Marine" in Noirmoutier-en-l'Île took us on a captivating exploration of the sea's treasures. With an impressive lineup of five different fishes—Red tuna, Small peach mackerel, Whiting, Grilled monkfish, Turbot, and Pollack—the dining experience was truly exceptional.
In awe of Chef Alexandre Couillon's expertise in preparing seafood, we marveled at his mastery. Having learned the Ikejime technique from Okuda-san, owner of the famous Kaiseki restaurant in Ginza, Tokyo, he ensures the fish is treated with the utmost care, resulting in flawlessly grilled fish on the skin using a Plancha grill, preserving pristine flavors without any smokiness. His sauces, light yet brimming with acidity from unusual garums like Pin Vinegar, elevated each dish to new heights.
From the vibrant Red tuna, delicately accompanied by candied egg yolks and onion juice, to the Small peach mackerel, exquisitely grilled with beetroot and parsley, every bite transported us to a realm of culinary excellence. The Lobster and Osciètre caviar flan, immersed in green crab broth and marsh herbs, was an indulgent symphony of flavors.
The Whiting, creatively paired with courgette, fig leaves, and fennel butter, and the Grilled monkfish, complemented by green beans and almond milk, showcased Chef Couillon's unparalleled artistry. The Turbot, skillfully presented with tied chard and head juice, and the Pollack, accompanied by field carrots and pine butter, further solidified the notion that we were experiencing a culinary masterpiece.
For dessert, the refreshing Cucumber infused with elderflowers and the intriguing Sea Lettuce, served with buckwheat and caramel and a burst of citrus fruit, left us yearning for more—both low in sugar and great in taste.
The whole dining experience at "La Marine" was remarkable. Chef Couillon's dedication to showcasing the bounty of the sea, combined with his unique culinary approach, has earned him well-deserved three Michelin stars. It's an unforgettable culinary journey that will remain etched in our memories, forever cherished as one of the most extraordinary dining experiences we have encountered.
As a passionate lover of Japanese cuisine, I can confidently say that this is the best cooking of fish I have ever encountered, surpassing even all of my experiences in Japan. MAGMA offers refined fusion cuisine, blending French gastronomy with Japanese techniques by chef Ryuya ONO. With experience in Michelin-starred restaurants, Ryuya founded MAGMA in 2022. Emphasizing local, seasonal ingredients, he unveils hidden flavors like flowing lava, creating a unique culinary experience.
Upon visiting, we were delighted with the diverse and enticing main course offerings. The sea snails impressed us with their great texture, flavor, and acidity. The tuna, although a little weak with its soft texture, still provided an enjoyable taste. Another standout was the squid, cut into noodle form and served with an ink sauce - an excellent dish and true highlight of the menu.
Continuing on, the main courses included a dish featuring the head of a grouper. While the taste was excellent, we found it slightly overcooked. However, the duck dish was a true success, well executed and very tasty.
At a price point of Euro 70 for the tasting menu, this is great value. The wine list, as expected given the philosophy, features mostly organic and natural wines, but there are plenty of selections for wines that are not too funky for the discerning drinker.

In 1956, the fourth generation of fishmongers and carriers, Maria Juliana Azpíroz and Evaristo García, took over the family business and fulfilled their father's dream by opening the restaurant "Desde 1911." This restaurant became a homage to their family's legacy and a celebration of Madrid's status as the capital of fresh seafood in Spain.
"Desde 1911" boasts a beautiful Nordic-inspired setting, offering three distinct spaces: a dining area with a view of the kitchen, an open and landscaped central patio, and a private dining area. The restaurant's philosophy revolves around serving the freshest seafood of the day, creatively reinventing the menu daily based on the best catch from Spain's coasts.
The culinary experience at "Desde 1911" is enhanced by traditional artisan techniques, with a special focus on the wood-burning oven, preserving and magnifying the natural flavors of the seafood and fish.
The restaurant's team of 20, led by Abel Valverde in the dining room and Diego Murciego in the kitchen, ensures an unforgettable dining experience marked by excellence, craftsmanship, and personalized service.
Throughout its journey, "Desde 1911" remains a testament to the family's passion for the sea and a testament to their commitment to delivering the finest seafood to the heart of Madrid. The dining experience at this restaurant was nothing short of exceptional. With a diverse menu offering 3-6 starters, the main fish of the day, a cheese cart, and a dessert cart, it was a culinary delight. As expected, the seafood was world-class, a testament to the fact that the restaurant is owned by one of Spain's best fish mongers.
The Chipiron de Auzuelo a la Brasa stood out with its delightful texture, complemented by the sweet onion that added a perfect contrast and flavor. The Caviar de Beluga Irani con Brioche de Mantequilla y Beurre Blanc was an excellent pairing, with the low-salted caviar and Beurre Blanc creating a harmonious combination, while the brioche added a pleasing texture.
The Bonito del Norte Ahumado con Tomate y Jalapeños presented like a modern painting, showcasing the seasonal tomatoes and tasty Bonito in a visually appealing circle. The dish was an explosion of flavors, with the star being the luscious tomatoes.
The Tallarines de Calamares a la Carbonara cen Trufa Nepra de Nerano, featuring squid cut in noodle form with a rich carbonara sauce, provided a delightful and rich course, full of umami and satisfying textures.
The Lubina de Ribeira en Horno was a standout, impressing with its soft, juicy, and flavorful profile, a true culinary masterpiece.
The selection of cheeses and dessert trolley was unbelievable, completing the meal on a high note.
Visitors should be prepared for a generous portion of food, but every dish was executed at the highest level, with impeccable taste and presentation. The front office staff added to the wonderful experience, making this restaurant a must-visit destination. Less
