Chef Miyakawa produces outstanding otsumami starting with delightful soup with shirako. the journey continues with various sashimis, one of the them a double tuna from an animal of 149kg and another layer of a baby tune of 16kg. Interesting and very tasteful contrast and combination. For me the highlight of this section was the awari (Abalone) with a texture and taste which is hard to beat.
The is mildly seasoned, the size just right and airy. His betas are seasoned up to 2 weeks which gives the great umami flavour.
Wonderful place to come, besides excellent food you get a great interaction with a very pleasant and humble professional at the height of his abilities. Less

The food, as one would expect, is very local and seasonal. The flavour is restrained and focused. A very interesting dish was the grilled Hata-Hata fish which one eats Ayu style as a whole. This is possible, as one can see when seated at the kitchen counter, because the Chef constantly trims pieces with a scissor from the fish while it is getting grilled to cut away pieces which one would not like.
Great value for money and wonderful Omotenashi. The Lady of house prepared a personalised menu in English and Japanese and comes around to explain each dish. At the one she gifts you with origami toy and of course the remainder of the rice as snack for later on. Less

Excellent meal. Shari well seasoned and good acidity. Nigiri lightly pressed with plenty of air in the shari. Netas seasoned in soya sauce. Otsumani very well cooked. Great meal and great value.

In Sapporo they also serve, besides the normal Curry a Curry Soup, which is very dark and strong.
Well worth the wait of 1 hour. But don't argue with the Lady, she has exact ideas of where the line should be or not should be.

Hip Ramen. Everything is made by themselves. Very tasty chashu. The soba master was a professional snow boarder and speaks English well.
