Second visit at Chef Setsuo Funahashi sushiya. Great place with great hospitality. The composition of his menu is slightly different as he mixes otsumami dishes with nigiris.
It is great to watch him prepare and season the shari during the serving when he needs more. The deliberate focus of how he treats the rice encompasses the importance of rice in the Japanese culture.
This place is only a short bus ride from the station so it is easy to reach and worth a detour. Less

Old fashioned sushiya in Fukuoka. No photo policy and one has to take off the shoes which is unusual for a sushi restaurant. On the other hand the wasabi gets ground on a metal grinder and the fish gets grilled on a gas grill. Go figure.

Old fashioned sushiya in Fukuoka. No photo policy and one has to take off the shoes which is unusual for a sushi restaurant. On the other hand the wasabi gets ground on a metal grinder and the fish gets grilled on a gas grill. Go figure.
The composition of the meal is classic, 6 otsumami and 15 nigiris plus tamago. The fish often aged and well cut, the shari with very low acidity and hardly coloured. The ingredients not off the highest quality and the cooking not flawless.
It seems to be a suhsiya where long term customer come and hang out, ordering not omakase but a la carte, spending three plus hours there, talk to the Chef and themselves and generally having a good time. I also had a good time, as I was seated next to a sushi chef who lived in London and was keen to talk to me.
Fun place to experience a truly local sushi, but don't go there just for the food. Less

Second visit to this place wich is located in an unassuming neighbourhood of Kasuga City. Chef Yusuke Seguchi delivers solid Edo Mae sushi in a dining room which is very modern and during the day light flooded, an unusual setting for sushi places which tend to be underground with no natural light. The counter is of beautiful ginkgo wood, the pride of his owner as it is more than 100 years old.
Lunch has a very short otsumami section (just 2 servings). The nigiri are mostly aged and paired with a rice from the Saga prefecture and seasoned with a special red vinegar, its acidity being daily high. Less

Interesting ramen very close to Tokyo Station. They combine ginger and shio ramen. As the ginger seeps into the broth it changes the flavour. The chashu also tastes a little bit of ginger. If you are really into ginger, there is ginger vinegar which one can add to the broth.

Excellent Shio ramen in the middle of Ginza. Light, golden broth. Noodles which come al dente and become softer in the hot broth.
Chashu has a light smokey flavour.
Long wait.
