This is a serious meal, serious in attitude but more importantly serious in quality. Chef Sawada is a true Edomae master. In recent years I have been rarely so impressed by a restaurant I have not been yet.

Small ramen shop in Nagoya specialising in Shio and Shoyu clears ramen. The chashu of pork and chicken is remarkably good. The noodles in the shoyu ramen are flat and thick while in the shio ramen round and thin. Both from domestic wheat and very good.

Back at the Master Tempura Chef. Fifth meal there and Shuji Niitome never fails to surprise. This time, of course with his bamboo, his shirao and 姫子鯛 ヒメコダイ, a rare fish from Kanazawa which is considered a by-catch but actually tastes fantastic. Finally, the sweet potatoe a complete triumph! Nagoya branch of the same name place in Tokyo. Clear broth made of dried fish, thin noodles they produce themselves. Very tasty.

Paitan ramen made out of pork, chicken and dried fish. Homemade noodles and two types of cashu. The soup gets whipped up before the serving to create a foamy broth.

Great local Udon restaurant. The shou udon is served with cut leeks and sesame and a raw egg on the side. The chicken tempura was perfectly cooked and very juice. A perfect compliment to the udon.

Beginning of the bamboo season with 2 dishes included bamboo. Of course, the famous dashi with the onion. Two tempura dishes, swordfish and carrot. And interesting dish with 5 different claims. Main fish kimedai and at the end two rice option and cold udon.

Fun dinner at the single table Maum in Palo Alto. Korean cuisine with some execution flaws but overall very pleasant.

Another trip to the south part of Fukuoka. The husband and wife make you feel as if you were invited to their home.
The otsumami and nigiris are well prepared and nicely calibrated, the Ankimo, the fugu shirako with rice and the Tai and uni nigiri being the outstanding pieces of the meal.
