In my opinion the best I had there.

A 50 year old steak house with a Chef who is 81 year old. I am sure the menu has not changed in decades and is super simple.
The meat is delicious and the execution perfect. Worth a visit

I am not posting this meal because I think this sushi can compete with the top masters. I just want to make a point.
A friend of mine from Fukuoka is in town and she wants to go to a place she frequented when she was living in Tokyo.

A friend of mine from Fukuoka is in town and she wants to go to a place she frequented when she was living in Tokyo.
A very lokal place which is open for lunch and continues to serve until closing, it also caters for the neighborhood for take-out. You walk in and get seated on the counter next to a couple which of course instantaneously start to talk to you. They both are 85 years old, know themselves since junior high school, thus 70 years and are married for 62. They drink beer to start and then switch to sake for the nigiri which they order a la carte from them menu which is placed in front of the customer.
The sushi itself is of great freshness and prepared highly skilled. Just look at the presentation of the kohada. Cut in small stripes and braided on top of the Shari, it is something I have not seen before.
The price is very reasonable.
You won’t find this combination nowhere except in Japan. Less

My gym is 4 minuted away from my apartment. There are at least 50 restaurants in this very short distance.
This is a local soba shop producing home made noodles. They also have some excellent tonkatsu which they serve by the piece so one can taste a variety of them.
Great taste and value.

The master of temperature for sushi. Different neta and shari temperature for each piece, the biggest difference being 10C!.

Countryside excellent ryokan with massive baths and a special sauna where you lie on hot stones instead of wooden benches.
The food is very local and well executed.

His ankimo is outstanding, he cuts away huge junks to leave just the inner core. Sweet and flavorful it melts in your mouth and just leaves a marvelous lingering taste behind.
The nigiris are also well executed and sourced. The sea bream being today’s favorite of mine.

The nigiris are also well executed and sourced. The sea bream being today’s favorite of mine.
He is famous for matching the temperature of the rice and the fish in order to bring out the best. It is quite interesting to eat this as some of the nigiri have 10C difference between the rice and the neta. Less
