Very delicious, well calibrated with great flavor profile, not too spicy.
And very reasonable.

You come to Tokuyamazushi” in search of the taste of "Narezushi (fermented fish sushi)", which is only available here. Nagahama City, Shiga Prefecture is located at the north end of Lake Biwa on the shores of Lake Yogo. In this place, which blends in with the original landscape of Japan, chef Hiroaki Tokuyama welcomes guests with his daughter Mai and her husband Nayuta.
"Narezushi", which is fermented with fish, salt and cooked rice by lactic acid, is said to be the origin of sushi, with unique strong flavor.
The multi course menu is well balanced and very interesting to eat. As we were still in the winter menu, the main event was the “kuma-nabe” with is dashi which is unique to the restaurant.
Delicious and worth a visit.

Another extraordinary experience, exclusive to Japan! A mere 20-minute train ride from Odawara brings you to a station that lacks taxis; instead, there's only a sign with a phone number. Upon calling, the dispatcher explains that a taxi will take an hour to arrive due to high demand. When we informed the restaurant of our delay, the chef offered to pick us up. Remarkably, the chef is an octogenarian who, alongside his wife and son, runs the restaurant. Their menu is as simple as it is delectable.
The meal begins with an impressive array of sashimi, both varied and exquisitely presented, so fresh that the shrimp continues to move for an additional 10 minutes. After navigating through the generous serving of raw seafood and fish, the main course is served: a kimetai shabu-shabu. The dashi, a closely guarded family secret, is outstandingly delicious, crafted from grilled kimetai among other ingredients. The chef personally guides you through the cooking process: the kimetai head for 15 minutes, the kimetai slices for about 30-45 seconds depending on their thickness, and the negi (ネギ, young onions) for precisely 8 seconds. This combination yields an incredibly flavorful profile that leaves one unable to stop until fully satisfied.
Naturally, the meal concludes with a rice dish - Zosui (Japanese Rice Soup, 雑炊) made with the same dashi, subtly rich in umami.
All these delights come at a surprisingly reasonable cost. While it may not be the best food ever, it stands out as one of the most memorable experiences.

Takayoshi Yamaguchi san restaurant is generally listed as a sushi restaurant. I think this classification is wrong as he now clearly has established himself in his own category.
Yes, he still serves nigiris, but most of them have not a raw neta, but a cooked one. So together with his otsumami most of the food is cooked.
The sourcing is always absolutely top notch, the execution flawless. Together it creates an unbelievable meal. His extensive sake selection and pairing with his food leaves no wish unfulfilled.
Since March 2020 I have been there 10(!) times and every single meal was an extraordinary experience. Less

Unbelievable yakiniku. Catering mostly to students it is a one man shop whereas the Chef styles himself as very grumpy. But once you get beyond these first rough edges he is a very genuine, even humorous guy.
The food is great, the beef well sourced and the prices excellent.
