Another great meal at Sugita. This time on the same day as Saito (lunch and dinner). I am not sure if Saito had a rare off day but in direct comparison Sugita had the edge.
His concentration when forming the nigiri is like a study of mediation. He seem not to look but only to feel.

The neta is always impeccable and his rice seasoning is very much to my liking as the acidity dominates.
Sugita is now the number 1 sushi restaurant in Japan, I have been to maybe 100+ so surely not even representative, but I can understand this. he is for me also number 1, when it comes to Edo-mae. Less

- Gerhard Huber added a new meal Lunch at De Jonkman at De Jonkman with Neil Walker
Revisiting de Jonkman after a few years of absence. Filip Claeys, the Owner/Chef started this place in the former hunt lodge in 2006, after spending his formative years at De Karmeliet and the legendary Oud Sluis.

Over the years he has grown and is now truly on his own. He sources most of his ingredients locally and even purchased his own cow, so he can determine when it is the best time to slaughter it for food.
His dishes are well constructed, with some excellent combination of flavours. The inspirations come from all over like a Paella with Chorizo and Norwegian lobster, something which when you read it not necessarily seems go well together but somehow he makes it work. The dishes are focused and the execution flawless.
A great place when in Brugge. Especially when one is looking for a great lunch.

The new Chef Alex Dilling came from The Connaught were he also cooked 2 stars.
The menu has been changed and so also the style of the restaurant. Mr. Dilling is still classical French but we a greater emphasis on ingredients.
The Blanquette de veau was for me the outstanding dish with its cream veal stew of unbrowned butter a great delight.... More

- Gerhard Huber added a new meal Dinner at Ernst restaurant at ernst
2nd visit at Ernst in Berlin. Dylan and his team continue to evolve and refine their offering. This is a very long meal with 30 plus dishes, some of them just small bites of one ingredient.
Highly recommended!

- Gerhard Huber added a new meal Dinner at Hippocampus at Hippocampus
Great local Italian place. Never saw the menu in maybe 10 years. You just go there, talk to Sergio and then he will take care of you.
Simple, Italian, great flavours and execution but most importantly it makes you feel happy.

- Gerhard Huber added a new meal Lunch at Søllerød Kro at Søllerød Kro with Mikkel Steen Andersen
Arguably one of the best options for a Sunday lunch in Copenhagen. Short drive to the north through leafy suburbs brings you to Søllerød which is a beautiful little village. Across the church (where else) is the restaurant.

Wonderful lunch with my officially Number 1 dining partner in CPH (and it is not Mikkel).

- Gerhard Huber added a new meal Lunch at Daniel Berlin at Daniel Berlin Krog
Third meal in 2019. And Daniel Berlin gets better and better. The dishes are well constructed, excellently calibrated, perfectly executed and really tasty. Daniel layers flavours in perfect harmony.
I am going to venture into new territory and will elevate Daniel Berlin to my favourite restaurant (ex aequo with CT @ Brooklyn Fare) outside Japan.

The fact that Daniel is a very humble person, does not like to travel as he is never satisfied (like me) with the result cooking somewhere are facts which make this destination not only worth a detour but worth a Journey. Less
