Very popular sushiya In Roppongi. Once established at the counter Chef Masa starts a seemingly endless stream of small dishes, cooked, raw, otsumami and nigiri. All of them very small but very tasty. If you show interest he also shows you the various fishes he has sourced and serves you in a very good book. I especially like the multiple servings of different parts of the same animal prepared in different ways to bring out the best in each part.

Back at my favourite sushi place in Toyama. Kimura-san is a person with a tiny body (he eats only once a day to maintain his leather jacket model body) but with a big heart. Even though he is hurting in this period, he keeps up a good spirit and makes you feel welcome.

Back at my favourite sushi place in Toyama. Kimura-san is a person with a tiny body (he eats only once a day to maintain his leather jacket model body) but with a big heart. Even though he is hurting in this period, he keeps up a good spirit and makes you feel welcome.
We ordered the dinner menu and as always he did not disappoint. His shari is highly acidic, which I like and some of his neta preparations are very special.
He has a personal relationship with the Maisuzumi sake brewery which enables him to serve some very rare sakes.

The dining room of Chef Satoshi Furuta’s Chiune is as simply as his food. Super focused with reduced number of ingredients but perfectly executed. Just looking at the pictures One can imagine the taste concentration onto the essential.
Expensive but so good that we booked another session in a few weeks.

Lunch at Cainoya which moved from Kagoshima to Kyoto in November 2019.
Chef Shiozawa used this opportunity to raise his game. The location is stunning, his tableware customised and artisan. His cuisine has evolved as he uses experimental techniques (like low pressure cooking) while at the same respecting tradition and old rules. The composition of his meal is like a Kaiseki meal, with all its components, but he freely interprets it with this framework. He also managed to source the famous Murasawa beef, which is very rare and really delicious.
This is going to be clearly the best fusion place in Kyoto and will be highly rated. As it only has 7 seats, reservation will become difficult. Less

Young husband wife team produce a excellent shoyu ramen with two kinds of chashu. The gyoza are served not as usual with a sauce but only with salt.
