Creamy miso ramen. I got the spicy version of it. The noodles are thick, curly and egg based.
Fist time for a long time I had to stand in line. Good to see that business is picking up.

Dinner at the legendary Yanagiya in the Gifu mountains. First meal in the summer with a different menu compared to my winter menus there.

Dinner at the legendary Yanagiya in the Gifu mountains. First meal in the summer with a different menu compared to my winter menus there.
Ayu in three different forms, two servings of vegetable tempura, then boar and deer. All of these served with the usual hospitality and executed with the seasoned skills of the chef. They use two different types of charcoal to get the right temperature for the various fish and meats.
It does not get better than this when one wants to experience the traditional way of grilling wild animals.
However, I personally find the winter menu more interesting in variety. As much as I like ayu, three servings while interesting as to the variations, is getting tiresome.

Here we have another example of a great Spanish Japanese fusion execution. The Chef worked in Barcelona for Abac and incorporates his experience and memories into his menu.
The flavor profile is clearly Japanese and there are only retraces of his time in Spain but still it works greatly. The execution was for this meal perfect with not one let down and the service and hospitality excellent.

Superspicy ramen from a Chinese places which actually started a Japan wide trend with this type of ramen.
Really spicy but tasty and great to soak up superfluous alcohol.

This place is the original shop even though that the head shop is now in a different location. The noddles are produced there but they have a different menu.
We tried two different ramen.
The seabura ramen is lighter and has curly noodles. For this ramen the back fat is cooked down and added to the soup in order to bring out a richer flavor. They recommend to add garlic half way though the bowl. This improves the taste significantly.
The noko niboshi is more intense with straight thinner noodles and a distinct after taste from the dried fish.
The Edamame is a soupless bowl of noodles which added fish powder and oil. One can dip it into the remainder of the soup or eat it by itself.
Great shop in the very industrial area of Kagegawa. Less

Third meal in almost as many weeks. One has to admire Kimura-san! Back in Toyama and the lock down easing in Japan his restaurant is almost full for lunch. Third meal in almost as many weeks. One has to admire Kimura-san! Back in Toyama and the lock down easing in Japan his restaurant is almost full for lunch. Here he is back in his element preparing almost every single dish of the 20 course omakase lunch menu for his customers. At the same time he is shouting instructions to his four assistants to start the prep work on the next courses. He, unlike other es, does not start everybody at the same time, so it is a massive coordination effort to give every guest their course at the right time without too much waiting time. He does this all with an incredible ease and energy.
The meal was one of the best ones I had so far. The famous nodoguro pair serving (male grilled an skewer and femal as shabu shabu) is always an highlight, his cured saba a delight and his aji salad sensational.
Of the nigiri I especially like the Ike, which he freezes over a week and the cuts it in two ways to get the texture soft and the sweetness out.
A wonderful place at a very reasonable price. Less
