With all the hype that @ambassadorbonvivant has been laying on ⭐️⭐️ @restaurantjordnaer recently, I had very high expectations for our meal there. But I’m glad to say that Eric Vildgaard and the team absolutely smashed it. The focus is on seafood here of exceptional quality that is treated with precision and love. King crab, hamachi, trout roe, “Fjord” shrimps, mahogany clams, scallops, lobster, langoustine, oysters, cod, turbot, mussels are all represented on the 21 course menu. And of course caviar & truffles by the bucket load. Eric always says, “only the best for our guests”, and that’s what everyone gets. He has been known to have a stern word with any of his chefs that don’t put enough (!) caviar on a dish. The service is as refined as the food, with the chefs serving every dish in an intricate ballet of carefully choreographed moves that would put any 3 star restaurant to shame. Yet at the same time it is a friendly and jovial service and not one bit a stuffy or stiff experience. The menu is carefully balanced so as to leave you perfectly satisfied and not wanting for another few dishes but at the same time not waddling out stuffed to the gills. Having turned a corner as a younger man heading down the wrong path in life, to get from where he was to where he is now is truly remarkable and my hat is off to him. He says that the true achievement for him personally is not the two Michelin stars but finding love and a successful balance between a family life with six kids and a busy and happy restaurant that despite the current situation seems to be unreliant on the international clientele that so many destination restaurants seem to be. But to have a supportive and loyal local community of dinners. It was truly a pleasure to eat there and I’ll be back as soon as I can.

Some delicious sweet things to round off a truly epic lunch

A fantastic lunch at (unbelievably just) 1⭐️ Søllerød Kro @soelleroed_kro just a short hop on the Metro from central Copenhagen. Apart from the outstanding food, the other reason this goes to near the top of my favourite 2020 meals list was the incredible service. You could easily walk into this restaurant, spot the smartly suited waiting staff and the crisp, immaculate table settings and expect quite a formal and potentially stuffy experience. You would be wrong. Apart from the excellent food, what made this a great and memorable meal for me was the incredibly friendly service. The host with the most, Jan, spent a lot of time chatting to me and the other tables and really made me feel incredibly welcome and relaxed. The brutally generous wine pairing didn’t hurt either 🥴
A generous glass with each and every course plus 3(!) glasses paired with the cheese left me in a very happy mood indeed (but totally ready for an afternoon nap 😴)

A very nice lunch last month at ⭐️ @carlocracco Cracco in Milan. Set in the impressive Galleria Vittorio Emanuele II just across from the even more impressive Duomo Di Milano the restaurant is on the first floor above a more casual offering on the ground floor. A long tasting menu that includes both traditional fare alongside more innovative dishes is on offer plus a la carte is also available. I have had a lot worse 2⭐️ meals so I was quite impressed when considering that this has just a single Michelin star. Worth a look when in Milan or even just a coffee on the ground floor to take in this impressive building

Lunch last month at ⭐️ @materia_ristorante near Lake Como where young chef Davide Caranchini draws on influences both from the local Lake Como area and his experiences working at restaurants such as Le Gavroche and Noma. Overall a really enjoyable meal with several standout dishes including a sea urchin custard with veal brain foam and caper powder, lamb with cucumber, sesame and caviar and an outstanding pasta dish of linguini with butter, agone fish sauce and amchoor. It’s certainly a menu that shows the youth of the chef and sometimes slightly misfires. A signature dish of pickled red cabbage salad, bitter almond milk, smoked bone marrow and caviar felt like he was trying too hard to tick all 5 taste senses at the expense of an actual tasty plate of food and a ‘pre-dessert’ of oyster, passion fruit and cumin has no business being called a pre-dessert. Although I guess you can call whatever you like a pre-dessert if it’s before the dessert🤷🏼♂️
But that oyster dish would not have looked out of place as one of the amuse snacks. It’s certainly food that got me thinking, which is generally never a bad thing. My only other gripe was that with only one dessert at the end of a 12 course tasting menu it felt like a bit of an afterthought. Though extremely tasty, the saffron and marrow dessert could have done with being the last line in the story rather than the full stop.
Very much worth checking out if you are in the area.

Dinner last month at @trippamilano Trattoria Trippa in Milan where exuberant chef @diegorossichef and team cook a menu that embraces offal and some often overlooked animal parts. He very generously prepared several smaller plates for me in order to try as much as possible. I left the choices safely in his hands and happily looked on at the counter where just two seats overlook the open kitchen. Friendly and warm service took this meal to the next level. Tripe, liver, kidney, heart, udder, intestines were all apparent in some form or other throughout the meal. The highlight for me though, and something that I have never had before, were fresh Ligurian Nolche olives. Not brined or salted like every other olive you ever had in your life but taken fresh and roasted to produce the most insanely creamy and flavourful hot bite. Highly recommended when you are in Milan.

A very nice dinner at ⭐️⭐️ Noma last month. It was nice to try some of the Vegetable season dishes as I have never managed to find time to visit during this season. Rene was very generous with his time and spent quite a while chatting with the 4 of us about what the future might hold for not only Noma but the now closed restaurant 108 (maybe the new Noma burger spot is one idea doing the rounds) and the future of the industry as a whole. When I asked if they had found a ‘new’ clientele base in the local residents of Copenhagen to replace all the international diners that have stopped travelling, Rene made an interesting point that yes they had, but whereas there used to be a seemingly endless supply of monied foodies able to jump on a plane and splash the amount of cash it costs to eat at Noma, the locals who can now get a formerly very hard to book seat will usually only visit once as a special occasion. And there are of course only so many locals visiting once before you “burn through them”. So ultimately it’s non-sustainable as a long term plan.
Noma has been of huge influence throughout the culinary world. Always pushing forward and not afraid to try new ideas and experiment in ways that deliver menus that to me are not boring and predictable but often challenging and thought provoking as a diner.
I am sure they will come back stronger than ever as is my wish for anyone in this brutally struggling industry.
Go out and eat if you can. It’s doable in a safe and responsible way. I don’t believe it’s just luck that after visiting over 45 restaurants last month I received a negative COVID test result, but the result of an industry that has put in place systems and precautions that together with your own personal precautions have created a safe environment in which to travel and eat in.
