The next part of the duck feast was the leg. The leg meat and skin are removed & cooked separately then layered back onto the leg bone which is then cooked again and glazed with a paste of ants & pine

Next, and possibly the dish with the most shock value, was the fresh duck heart served lightly smoked and chopped tartare. The beak had been split open so we were left with the slightly gruesome task of lifting off the top half of the beak then using the duck’s tongue bone as a spoon. It was incredibly delicious but not for the faint of heart. But part of the point of the feast is to utilise every part of the duck with nothing going to waste

The next course, as with last year’s menu, was the duck feast. With many parts of the animal being served in various different ways, different cooking methods & textures.
First the head is presented with the brain served tempura style. You use the feather as a skewer and pluck the brain from the skull and eat in one bite 🦆 🧠 👌

The more fibrous parts are removed to leave the kernels which are then grilled (like corn on the cob) & basted with smoked butter then seasoned with pickled roses, crushed ants, dried juniper, arctic thyme & coriander seeds. Served with a bouquet of fresh herbs including lemon thyme, sorrel flowers
