After Barcelona the next stop on this three week three city tour was Madrid and the first meal was very special indeed, a private dinner at a restaurant that was an absolute highlight of 2020 for me so I was incredibly happy to go back.
Chef Jorge Muñoz very kindly offered to cook for twelve of us privately.
The meal was stunning. Purely ingredient focused and packing every possible ounce of flavour into each dish. Mind blowing really when you consider that Jorge works that kitchen on his own.
The croquetta is the best I’ve ever tasted and the river lamprey, a fish that I’ve never tried before, was a revelation.
Together with Diver XO this is now firmly at the top of my list of restaurants to book when planning a trip to Madrid.
@jorgemunozchef has since moved on but I am very excited for his next project.
