Wine is on the table while u drink it
Identity is completely his own
Leek dish one of the best I’ve tried. Tears in eyes the sauce is from the gods.
Better than Vyn and Frantzen, but I guess it’s a Danish chef so I’m not surprises.
Take on a Waldorf salad but with caviar instead of grapes
If you are visiting Jordnær, Noma and Geranium on Copenhagen, consider adding Knystaforsen to that list.

Deep in the Swedish woods sits 1-Michelin-starred @knystaforsen , run by Danish couple @nicolaitram and @evahtram , who left Copenhagen behind to almost accidentally create Sweden’s most exciting restaurant.
Here, fire is the soul of the kitchen. Every dish is touched by smoke, from a tartlet served on coals with smoky cream and trout roe, to a seemingly simple burnt leek that brought tears of pure joy to my eyes. Duck hearts with a butter sauce infused with pheasant and burnt hay is a masterpiece.
Knystaforsen is as much about experience as flavor, from the campfire greeting you at the entrance, to cocktails in the garden, to Tram personally drawing a flower for each guest mid-service. Sitting here feels like a campfire among friends, each bite novel, daring, and unforgettable.
A paradox of Nordic cuisine, the most exciting Danish chef is cooking in Sweden, and Sweden’s best chef is Danish. Knystaforsen topped both Vyn and Frantzén for me, with flavors that stun and a soul you can feel.
An evening to remember and one I’ll never forget.

Sure, we have a proper kitchen, but we prefer cooking outdoors, over flames and embers. It’s sensuous and impractical, in the best sense of the word. It’s as much about camaraderie around a campfire as it’s about enjoying a meal seasoned with the visceral thrill of its unhurried preparation; fire, the primordial culinary art, provides sustenance for the soul too.
Over the course of our four hours together, we will regale you with a terroir-driven tasting menu that celebrates the wild nature around us. Some ingredients are plucked from the rivers and lakes, others are foraged in the woods, wild game and artisanal products are sourced from local purveyors.
Our house is a casual place, there aren’t many rules here, except for one: making sure you feel at home.”

Nicolai was a very successful chef excelling in both the classics and the new Nordic cuisine inspired by the avant-garde Spanish influences of the El Bulli group for whom he also worked. But the eventual realisation that, having opened his own successful and highly regarded Nordic bistro, this life was not fulfilling him and the love was not there while cooking in this environment, a change was in order.
A successful career in television followed involving projects like Masterchef Denmark. But good jobs, financial security and a home in Copenhagen still did not complete the puzzle and bring them the contentment and happiness that they were looking for.
They decided to purchase a property in the Swedish woodlands and what was once a weekend home has now morphed into a restaurant where Nicolai can finally cook with contagious joy and from the heart. He seems so happy to bring people into his home and cook a menu of incredibly tasty dishes that incorporate produce from the surrounding terroir, the river, the forest, and use fire and smoke in some way in every dish. The perfect marriage of ingredients touched by fire and served with incredible classical sauces results in one of the best meals that me and Hayley have ever had. We also stayed in one of their comfortable rooms and enjoyed a terrific breakfast in the morning. I cannot recommend this place highly enough
