The end of our first day of the Valencia/Alicante tour was a lovely dinner at ⭐️⭐️ @lescaleta L’Escaleta. We asked chef @kikomoya to just cook whatever he wanted for us and he didn’t disappoint.
This was one of the most amazing shrimps that I have ever eaten. Gamba roja en salazón. Covered in salt for 10 hours the result is insane 😍
I am sure this dish will be very high up at the end of the year in my best dish list 👌

The end of our first day of the Valencia/Alicante tour was a lovely dinner at ⭐️⭐️ @lescaleta L’Escaleta. We asked chef @kikomoya to just cook whatever he wanted for us and he didn’t disappoint. This dish makes use of his salt chamber. I have seen the salt chamber put to great use before by @garethwardchef at the amazing @ynyshirrestaurant in Wales. The tuna here was cured in the salt chamber then dried tuna heart was shaved on top for an incredible umami flavour. The dish is finished with a Mediterranean molé. A truly memorable dish but there was even better to come. .
