Lovely stuff at Amaru in Melbourne. Amaru is an amalgamation of words loosely translating to a “A beautiful place to love”
They aim to provide an experience that is one of excitement, intrigue and intimacy. Located in the inner-city suburb of Armadale with a maximum seating of 34 guests, the open concept dining room offers a beautiful connection between the diner and the creations of the kitchen. And you know how much I love a counter.
They offer a tasting menu inspired by exquisite Australian produce, prepared and inspired by culinary techniques from around the globe in the hope to evoke the senses and challenge the imagination along the way.
The menu is revealed and delivered by the entire team of chefs, waiters and sommeliers who carefully guide you through each serving, which may be accompanied by a variety of beverage options from the extensive cellar or house made infusions and ferments. Highly recommended.

The second day of my best of Spain tour took us to ⭐️ @osa.restaurante in Madrid. I first tried chef Jorge Muñoz’s cooking at the excellent Picones de Maria. Two visits there and I was hooked. So putting his and @sara.chefa ‘s new restaurant on the tour was a no-brainer and it absolutely didn’t disappoint. In fact, we were made to feel so at home that we ended up staying for over 6 hours.
What an incredible week. The Achefabroad best of Spain tour was a huge success and I honestly think that the lineup was unbeatable. 8 days, 12 amazing restaurants and 11 even more amazing gastronauts. Time to catch up properly with the posts so you can see exactly why you should be heading to all these world class restaurants. Please click the link in my bio to see what other fantastic tours we have coming up (Scandinavia, Thailand & Spain) DM me for more info.
We will be heading back there next year around this time for my best of Spain tour 2025 so please reach out if you’d like to grab one of the seats before they all go!

A trip to Melbourne last year kicked off with dinner at @arurestaurant last month. Very nice small plates cooked over fire but pretty terrifying when you have brutal jet-lag, your body thinks it’s 6am and the chef keeps sending out extra courses for you to try 😬
Would love to return when my head is on a bit straighter.
“Named after the group of islands which ancient seafarers frequented as part of the Sino-Indonesian-Australian route, Aru touches on early techniques – fermentation, smoking, curing, preserving and fire-licked meat, vegetables and fish.”

Our first stop, and an incredibly strong start to the tour was to ⭐️⭐️⭐️ @diverxo , where the current and two time world’s best chef @thebestchefawards @dabizdiverxo created a stunning menu showcasing the best Spanish produce with influences from his many travels around the world. This should be at the top of your bucket list to visit in Europe. We will be heading back there next year around this time for my best of Spain tour 2025 so please reach out if you’d like to grab one of the seats before they all go!

Dinner a while ago at @restaurantmetamorphica in Haslingdon near Manchester. @hayhay_hailz has found an absolute diamond here. The annoyingly young and talented chef @steven_halligan_ , together with his father serving and washing up, hosts just a few seats at his open kitchen counter. In fact on the night we went, he was only cooking for the two of us. There are no strict opening days that he adheres to. If a booking request comes in via his website he’ll open and then once he feels he has enough diners for the week he’ll close off the reservations. 13.5 covers per week(!) is apparently all he needs to break even at this former pub. He’s done the maths and seems like a very smart young man to have taken this site on, giving him the option to expand into the large space at a later date.
He is in the enviable position of having a beautiful open kitchen (installed by him and his dad), but also if you go back of house he still has the enormous former pub kitchen to rattle around in. The food is excellent and if you do venture his way then be sure to ask him to pull out his collection of old menus. £22.50 for three courses at Gordon Ramsey’s Aubergine or a menu from The Square in 1998 or a menu back when Mark Askew was chef de cuisine at restaurants Gordon Ramsey. Fascinating for some of us to geek out over 🤓
Highly recommended and definitely a chef to keep an eye on as I’m sure he has a bright future.
