Azabu Saotome 麻布さおとめ 1st visit — chef recently closed his 1 Michelin start restaurant Kaiseki Den in Hong Kong and returned to Japan. The meal was a hybrid of kaiseki and sushi which was interesting. Chef was very focused and precise. Nice flow of dishes and not too stuffy. Overall a good dinner but nothing extremely memorable. •

Kusunoki Ichihara くすのき市原 — a new location in Nagoya recently opened by the second chef at Kusunoki Tokyo. Same interior design but a bit more open and brighter. Same style of weightless tempura, although the seasoning was too light in the beginning. Turning point was the sweet corn (which was also my favorite bite), the second half of the meal was perfectly seasoned. Most interesting ingredient was the baby dragon fruit, slightly slimy texture similar to okra. •

Honkogetsu 本湖月 1st visit — highly rated kaiseki in Osaka, photos not allowed but still deserves a post. Traditional setting, seasonality here is reflected in both ingredients and tableware. In fact tableware is a major part of the experience — one dish was served in a 200+ years old bowl. Some highlights were shoro mushroom, uni & kare wrap, grilled torigai, and whale saetsuri (tongue) & hana sansho shabu. The experience would have been even better had I spoken Japanese as the chef also shares his philosophy and Japanese culture with customers. •
