A solid lunch at Sushi Shokunin Usui Hiroki 寿し職人臼井裕紀 produced by Sushi Arai, this is supposed to be Chef Usui’s final training after 14 years at Sushi Arai before opening his own restaurant. Good service flow, classic style, highlight was the kuruma ebi presentation, with the shell peeled off in one piece. •
