Had a 14 Bruno Clair Vergy Blanc the day before which was surprisingly concentrated and complex with hint of oxidative notes, unfortunately this 11 was quite simple and thin. 12 Deiss Schoenenburg was rich, ripe and powerful. 99 Beaucastel was quite advanced. All 3 reds showed well.

The 17 Martray CC on the other hand, was fresh, pure and zesty. Precise structure and minerally texture, especially for a Corton. A decade of cellaring would definitely be rewarding.

15 DRC Corton — a bit muted compared to the RSV, ripe, meaty and muscular. Fresh acidity and firm tannins, together with the power and density, this wine can definitely last.
17 Roulot Perrieres — one of my favorite white Burgundy producers and parcels, mineral nose with hint of reduction, great tension on the palate, precise structure and balanced finish. Roulot never disappoints.

Kate cuore 1st visit — a 5.5 hour dinner from 7pm to 12:30am. The restaurant is located in the tiny town of Imari in Nagasaki, over 1 hour’s drive from Fukuoka. Everything here is made from scratch — cheese, bread, pasta, ice cream etc. The experience was like watching a cooking show by an extremely focused and passionate chef with great attention to detail. Food was well executed but we did get a bit tired towards the end.. better come for lunch next time. •

Tempura Niitome 天風良にい留 1st visit — one of the top rated tempura restaurants in Japan located in Nagoya, almost 2 hours trip one way just for this meal. Overall it lived up to my expectation. Chef was funny and enjoyed interaction with guests. The way he prepares the food was quite “free style”, borderline sloppy, but the resulting dishes were turned out to be perfect. Batter on each piece looked thick but it thins out in the fryer, the texture of every bite was refined and balanced. Favorite was the huge juicy oyster and the sweet potato tempura with ice cream — hands down the best dessert I’ve had in a tempura restaurant! •
