Hirohisa Koyama (小山裕久) of Tokushima Aoyagi (徳島青柳) has trained a group of chefs who dominated the Michelin rankings in Tokyo and I have always wanted to understand the style of this lineage. 西麻布Es 1st visit — new innovative cuisine by ex-Sugalabo chef. Beautiful presentation, wide variety of high quality ingredients , although some dishes were a bit under seasoned. While the cooking style itself was quite original, didn’t resemble Sugalabo much, the bill certainly did.. •
