Each piece of tempura is prepared with a unique frying technique, leaving me in awe. The white sweetfish and ayu were simply outstanding. This place completely redefines the concept of tempura. It's incredibly unique and offers a special tempura experience.
Nestled in Ningyocho, Edomae Shinsaku offers a revolutionary experience that completely redefines the concept of tempura. Nestled in Ningyocho, Edomae Shinsaku offers a revolutionary experience that completely redefines the concept of tempura. Here, you can indulge in an incredibly light, almost weightless course that leaves you feeling as if you could eat more even after finishing every dish. The secret behind this astonishing lightness lies not just in the freshness of the oil, but in the meticulous scientific control of "dehydration and heat conduction" applied to the ingredients. The course begins with a powerful punch of sweet shrimp, showcasing remarkable skill in the contrast between the rare frying and the cooking of the head. The precise calculation of moisture content in the center, combined with the cooking technique that traps the umami of the ingredients, is truly impressive. From the delicate whiting and sweet sea bream to the surf clams and young sweetfish from the Tenryu River, each protein is cooked at the optimal temperature and time tailored to its characteristics. One particularly surprising dish features corn from Aichi Prefecture. This dish combines raw corn with tempura scraps and a pinch of salt, deconstructing the traditional "kakiage" to eliminate excess oil absorbed by the batter while extracting only the savory aroma and texture of tempura—a highly intellectual approach to reconstruction.Additionally, sea urchin steamed in oil at the expense of the moisture from shiso leaves, anago (conger eel) and eggplant that maintain their crisp structure even when coated in sauce, and the make-in potato, which has been fried six times to completely caramelize the starch, transforming it from a mere potato into a dessert-like delicacy, all showcase the pinnacle of heat manipulation craftsmanship. To conclude, a rich "tuna sesame chazuke" is served, followed by a dessert of "matcha kuzumochi." Thanks to the subtractive aesthetic of the tempura itself, which is exceptionally light, this rich finale perfectly complements the meal without burdening the stomach, providing a satisfying conclusion. However, this pursuit of "lightness" and "refinement" intentionally strips away the powerful punch and overwhelming satisfaction traditionally associated with Edo-style tempura. While it stands at the forefront of gastronomy, it may come across as too refined for those seeking the classic weightiness, marking a clear dividing line in preferences.Edomae Shinsaku is a unique establishment that presents the future of the tempura genre. The batter is astonishingly light. The flour is dried for two days at -60°C, and the egg whites are whipped into a meringue before use. This is my favorite tempura restaurant that I visit regularly. The chef's dedication is evident in the tempura, which evolves every time I come, leaving me amazed. This time, I enjoyed the tempura of sweetfish, which brought back memories from the previous location. The bitterness paired with wine enhanced the deliciousness. I always end up drinking too much sake with the delicious tempura. Once again, it was a great meal!
I was invited and visited for the first time. I’ve had delicious tempura before, but I was truly amazed by how exceptional it was here.First, two types of shrimp were served. One was a regular shrimp, and the other was a rarer variety. I thought, "Is that even possible?" but it was incredibly tasty and drew me in.I was also surprised to learn that the chef is self-taught. I hope to make a reservation for the fall!

The tempura batter is frozen and dried at -60°C two days before use, following the method from his time in Nagoya. The restaurant has an L-shaped counter with only 8 seats. The batter is made by mixing freeze-dried tempura flour, which has been whipped with egg yolk and stored at -60°C, and the consistency is adjusted by sifting the flour. They use cottonseed salad oil for frying. Despite the usual excuse of having a sinus infection and fever, I’m the kind of person who made four reservations at such a place. As for the Edomae aspect, you can feel it in the rich tempura dipping sauce and the sauce drizzled over the fried items. Less
It had been six months since my last visit. During that time, I had two cancellations... But the delicious food makes it hard to resist coming back. Today, I enjoyed plenty of Japanese sake and indulged in some amazing tempura until I was full! My next reservation is in four months... It seems like it's getting easier to book a table.
It had been a year since my last visit. The quality of the dishes remains consistently high. From the seasonal tempura, including sweetfish, you can really appreciate the quality of the ingredients and the meticulous preparation, making me genuinely think, "I want to come back again."Despite some hustle and bustle, this restaurant has a charm that makes you want to visit.

The shrimp and conger eel are particularly popular. The shrimp is served in two styles: regular and rare. The conger eel is fried at a high temperature to create a crispy coating, then transferred to a lower temperature oil, fried slowly at 140°C. The head is served with a reduced sauce, and the tail is enjoyed with salt. These shrimp and conger eel are truly the specialties of the restaurant. Additionally, the tempura batter is dried for two days at -60°C, resulting in a light texture that enhances the flavor. It’s impressive that this was achieved through self-study. The evolution of the tempura flavors is remarkable, every time I visit, it seems to improve. There’s no doubt about it, it’s a great restaurant. Less

You can sense the direction from the first bite.- Whiting / Sweetfish The balance of moisture extraction and the lightness of the batter preserves the essence of the ingredients.- Kyoto Tsukahara White Bamboo Shoot / Sea Urchin This dish elevates the flow of the course. The bamboo shoot is cooked to enhance its aroma while retaining moisture, achieving both juiciness and fragrance. The richness of the sea urchin adds depth, forming the peak of the meal.- Pureed Peas A structure that resets the rhythm with temperature and dashi.- Conger Eel Finished in a way that absorbs oil without feeling heavy, serving as the backbone of the latter half.- Vegetables (Eggplant / Shiitake / May Queen Potato) Each is fried according to its moisture content, avoiding monotony.- Tempura Donburi The harmony of the sauce, oil, and rice functions perfectly as a closing dish. The Japanese sake flows from light to crisp to umami, with a particularly refreshing sensation from the Katsuuma paired with the white bamboo shoot, resetting the palate. The relationship between tempura and sake is naturally established.Shared sentiment: Freshly fried tempura and Japanese sake.
