Hirasansou 比良山荘 2nd visit, the best season for some of my favorite ingredients: Moroko, Suppon, and of course Kuma nabe at it’s best! The only disappointment was that it was raining instead of snow, but still a beautiful place to visit. •

13 Dugat Groitte — young and masculine, quite ripe but well balanced fresh acidity and mineral tension on the palate. Subtle and elegant oak.
91 Xavier Liger-Belair Richebourg — dried fruits, undergrowth and tea leaf. Still vibrant with good concentration, reasonably long and balanced finish.
11 Roch Corvees — signature lifted floral nose, VA less evident on the palate with enough substance to offset. One of the rare occasions for Roch where the palate delivers what the nose promises.
