During my business trip to Akita, I visited Sushi Koma, a place I had been curious about for a while. This was my first visit, and honestly, I didn't expect to encounter sushi that would leave such a lasting impression on me.From the moment I took my first piece, I could tell not only the quality of the ingredients but also the meticulous preparation and craftsmanship behind it. The way the knife was used according to the state of the fish, the temperature, and the balance with the vinegared rice—all of it came together so naturally that I found myself genuinely moved by each piece, thinking, "This is delicious."What stood out to me the most was how they maximized the natural flavors of the fish without relying on flashy presentations. The aroma, texture, umami, and lingering taste as soon as it entered my mouth were all incredibly beautiful, and I felt excited with each new piece that was served.I often have sushi, but this experience reminded me of its profound depth. I truly believe this restaurant offers work that is worth traveling from afar to enjoy.Although I came to Akita for business, I can confidently say that this was the highlight of my trip. A true adult pleasure.Snow crab rice ball is a refreshing summer treat.Sweet shrimp, salted and served with three pieces, is sweet and delicious.Grilled knife fish from Akita, seasoned with salt and sudachi.Mackerel rolled in four layers, grilled and then tightly wrapped in exquisite nori. This is a specialty you can only taste here.Fatty tuna, grilled over straw, has an incredible smoky flavor. This technique brings out the best flavor and texture, showcasing the chef's skill and passion.Whelk with plum paste, the crunchy texture and umami of the shellfish create a delightful pairing with sake. Apologies to my designated driver!Grilled eel, cooked rare over high heat, is enhanced by sansho pepper. The unique texture and aroma from the grilling make it a one-of-a-kind experience.Summer squid, filled with sesame and shiso, has a soft and rich flavor.The hand roll with fatty tuna and smoked pickles wraps up this hearty Akita sushi experience.Black seaweed soup, with its umami and delightful texture, is a gift from the sea of Akita.For dessert, we enjoyed a very summery anmitsu with vanilla ice cream.Once again, everything was incredibly delicious. Laughter fills the air, and the restaurant feels united around the chef.The rice is made from Hitomebore, which is grown at the chef's family home. The fish is primarily sourced locally, with some exceptional selections directly from a friend in Miyagi. The sushi, carefully crafted with attention to the vinegar blend and temperature, is truly impressive. While adding ingredients to sushi can sometimes risk losing the essence of the ingredients, Chef Ikoma's approach enhances the flavors and aromas, creating an astonishing ultimate sushi experience. The crushed shells are simmered to enhance the richness. ●Ribbonfish Served hot and fluffy right after being grilled over charcoal, the combination with salt and sudachi is heavenly. ●Mackerel Sushi On this day, there were four layers of mackerel! I always look forward to the specialties at Sushi Koma. ●Oga Honmaguro Toro Grilled over straw right before serving, the two slices offer a perfect texture and aroma! ●Tsubugai (Whelk) While feeling the crunchiness, the spread of ume paste highlights the excellent pairing. ●Anago (Conger Eel) Grilled just before serving, the outside is fragrant while the inside is half-cooked. On this visit, I enjoyed a variety of summer-inspired sushi, and each piece was outstanding. I could really appreciate the differences in flavor among the uni from different regions. The extra touches added to each ingredient were remarkable.Every time I go, I have a great time, and the delicious food makes the hours fly by.And the desserts from the owner are simply exquisite!I will definitely be back! Sushi Koma 鮨駒 (Akita) pop up in Tokyo — by no means a traditional sushi meal, techniques such as smoked caviar and amadai sushi topped with crispy scales are probably something you would expect in a high end American sushi restaurant but they worked so well with the top quality ingredients and acidic akazu shari. Such a fun and delicious experience. •

Sushi Koma 鮨駒 (Akita) pop up in Tokyo — by no means a traditional sushi meal, techniques such as smoked caviar and amadai sushi topped with crispy scales are probably something you would expect in a high end American sushi restaurant but they worked so well with the top quality ingredients and acidic akazu shari. Such a fun and delicious experience. •
