Amazing dinner at Niigata’s 鮨登喜和 Sushi Tokiwa pop up in Tokyo, the maguro and pickled Chinese cabbage was definitely a strange combination for nigiri but surprisingly worked very well. Slightly boiled ikura TKG was creamy and satisfying. Should definitely visit the main shop someday. •
