■ Visit Situation I traveled alone to Takasaki for two days and visited this restaurant on the second day. I essentially took the train just for this place and another one. On a weekday evening, I was able to make an online reservation and was seated without any wait upon arrival. It’s about a 15-minute drive from Takasaki Station, and approximately 2.7 km from the nearest Kuragano Station, so taking a taxi seems practical. The seating is only at the counter, where you can watch the food being fried right in front of you.■ Order Details I opted for the Omakase course (JPY 24,200) and added Aomori natural loach and myoga. I chose a Guinness beer for my first drink, and for the rest, I requested wine to be selected for me.■ Impressions What surprised me the most was that even though everything was fried, each ingredient was treated completely differently. Some dishes retained a near-raw texture, while others highlighted the fragrance, and some had their sweetness concentrated through long preparation. It felt more like a course meal that continuously provided the optimal solution for each ingredient rather than just tempura. As a result, the flavors remained varied until the end, and despite being a full course, I didn’t feel heavy at all. While it’s not cheap, I believe the price reflects the experience of watching this meticulous preparation right in front of me.■ Details of Each Topping and Ingredient The water eggplant was peeled and lightly fried, the broccoli was given a roasted nuance for a fragrant touch, and the sweet potato was steamed for four hours, then sun-dried for two days before being fried in stages. Even among the "vegetable tempura," each had a different approach. The shrimp was served in two styles: lightly fried and normally fried, including the heads and tails. The sweet sea bream was presented with its scales raised, and the conger eel was accompanied by fresh pepper. The fried abalone and liver cold pasta was an interesting combination that allowed you to enjoy both at the same time. The salts included Amakusa salt, Mangetsu salt, homemade soy sauce salt, and salt and pepper. The finale was a small rice bowl coated with a secret sauce, and dessert was ice cream made from Yatsushiro igusa (rush grass).I think this place is suitable for solo diners, anniversaries, or small group meals. We visited for a private reservation with 8 people. We enjoyed an omakase-style sushi and tempura at the counter. However, there was also sashimi, so it wasn't just simple tempura. The tempura made with local vegetables was absolutely fantastic. There were also pairings with alcohol, and the master, who is from Kumamoto, had a great selection of Kikuka wine. I came all the way from Tokyo just for this place, and it was definitely worth it.

店名の『天ぷら もっこす』は、熊本の言葉で頑固者という意味を持つ。店主の山口浩大将はまさにその言葉の通りの男。熊本に生まれ、東京の名店「つな八」で修業を積み、高崎の地で己の天ぷら道を極める。妥協なき素材選び、繊細な温度管理、火と油を知り尽くした技。彼こそが信念を貫き、己の道を突き進む頑固者なのだ。
天ぷらは、素材と油の対話。衣をまとわせ、高温の油に沈め、瞬間的に仕上げる。だが、ただ揚げればいいわけではない。どこまで火を入れるのか、どこで止めるのか、その一瞬の判断がすべてを決める。その卓越した判断力が、食材に含まれる水分や衣の厚みに変化をもたらし、最適なアウトプットを実現させているのです。揚げ油は「大白胡麻油」。香りがいい。それだけで、すでに天ぷらの完成度が上がる。

「鱈白子」天ぷらではないが、序章としての存在感は抜群。とろりとした舌触り、噛めばじゅわっと広がる濃厚な旨み。お凌ぎのような役割を果たしながら天ぷらへの期待を高める。
「椎茸」なんと興味深い揚げ方か。天かすで土手を作り、そこに油を滞留させる。結果、まるでアヒージョのような香ばしさを生み出す。サクサクで軽やか、そして内側はジューシー。その対比が心地よい。
「海老」一本目は丸まった姿のまま、レアな火入れ。ぷりっとした食感の奥に、ねっとりとした甘みが潜む。
「海老」二本目は、対極的にしっかりとした火入れ、甲殻類特有の香ばしさを引き出す。噛むたびに、香りと旨みが増していく。
