After 25 years, I returned to this restaurant after visiting the one in Kayabacho. I saw this place featured on a TV show about culinary masters, which inspired my visit. The tempura served here had almost no greasiness, and the cooking was perfect, allowing me to truly appreciate the flavors of each ingredient. After waiting in the lounge, I was seated at the counter.I started with a bottle of beer. The summer-only tempura dipping sauce was based on edamame, enhanced with some grated daikon. (Note that you need to take off and put on your shoes when moving between the third and first floors.)The owner exuded a presence that made me think, "So this is the God they speak of," with a quiet intensity that reminded me of someone who has mastered their craft, though I’ve never been to Sukiyabashi Jiro.Next to the God, an apprentice was carefully preparing young sweetfish, coating them in flour, and delicately arranging the highest quality sea urchin on shiso leaves, which could even be used in sushi shops. Everything was crafted with such care, precision, and beauty.They quickly refilled the grated daikon, and I enjoyed the flavor of the tempura dipping sauce. Drinks were served promptly as well. While savoring the crispy tempura and drinks, I was able to witness the God’s work up close. After removing my shoes, I stepped up to a beautifully maintained lacquered space that feels remarkably clean and calm, despite being in operation for 50 years. I was seated at the end of the counter, where I could see the frying process clearly. The appetizers were already prepared, beautifully plated. The drink menu was simple, offering bottled beer, wine, Japanese sake, and non-alcoholic options, but no shochu. I ordered a beer while watching the course begin. The 80-year-old chef skillfully dropped shrimp into the hot oil. While waiting, I sampled the dipping sauce with grated Japanese radish, which had a slight sweetness but also an exquisite umami flavor.[Omitted]The fried tempura exudes elegance. The batter is slightly moist yet crispy, and the shrimp is packed with concentrated flavor. A gentle sweetness spreads across the palate. The cooking technique is outstanding.The overall structure of the course is intriguing, starting with larger items and finishing with vegetables. Tempura is simple, yet the flavor varies greatly depending on who fries it. The selection of alcoholic beverages is refreshingly straightforward and classical. Every visit brings me happiness and inspiration. This is truly one of my favorite restaurants. The atmosphere, the flavors, and the seasonal ingredients all leave me feeling satisfied. It's no surprise that there are many foreign customers here. I feel proud to know such a wonderful tempura restaurant.
This is the renowned restaurant of the legendary tempura chef Tetsuya Saotome, who opened the establishment in 2009. Most of the decorations in the restaurant are crafted by an artist acquaintance of his. I would also like to visit Tensho in Yushima, where he trained right after graduating from junior high school.

I observed that the chef first added sweet potatoes, followed by eggplant, asparagus, and shishito peppers, then removed the sweet potatoes before frying the shiitake mushrooms. The batter was crispy and light, while the anago was creamy and delicious!!- There was no fishy smell, just pure umami filling my mouth!! Is this for real!? ( ゚д゚)- I had the body part with tempura dipping sauce, and it was rich, hot, and creamy—simply the best!! (//∇//)- Seriously, is the oil not heavy at all!? - It felt so light, and I could still eat more. (^O^☆♪**Asparagus**- Wow!! It was hot, creamy, and delicious!!- The aroma and sweetness of the asparagus were irresistible. (//∇//)**Shishito Peppers**- The batter was crispy, and the shishito peppers were hot and creamy!!- The aroma and mild bitterness of the shishito were delightful. (^O^☆♪**Tempura Rice Bowl**- For the meal, I could choose between a tempura rice bowl or tempura tea, so I opted for tempura tea this time.- First, the aroma was wonderful!!- Just like the clear soup, the broth was delicious!!- Breaking apart the hot kakiage (mixed tempura) while enjoying it was so good!!- The texture and sweetness of the kobashira (small shrimp) were the best. (^_−)−☆- The pickles included cucumber, turnip, and aged pickles, all of which were delicious and truly well-prepared!!**Dessert**- Finally, I had black bean jelly.- The black beans were rich in flavor and delicious!!- The jelly had a refreshing sweetness that left my stomach feeling light. ( ◠‿◠ )Every tempura dish showcased the ingredients' flavors, and I was deeply moved!!While my disciple's tempura is delicious, Mr. Saotome's tempura was even better. ( ゚д゚)And the anago was incredible!!The batter was crispy and light, melting in my mouth as well.The pure umami and aroma of the anago filled my mouth, making it the best!!There was absolutely no fishy smell, and I could fully enjoy the goodness of each part by having the tail with salt and the body with tempura dipping sauce. (^O^☆♪The vegetables were amazing too!!Myoga, asparagus, and shishito peppers had their aromas and umami beautifully brought out, making them the best. (//∇//)The final tempura tea had a rich broth, and inside the fluffy batter was a generous amount of kobashira, providing the perfect texture and sweetness to conclude the meal. (^O^☆♪Above all, the teacups, sake vessels, plates, chairs, garden, and everything in the restaurant were filled with artistry,making it feel like a single art museum!!The staff's attentiveness was meticulous, frequently replacing the paper for the tempura, refilling drinks, and changing the wet towels, creating a very comfortable atmosphere!!Thank you, Mr. Saotome and the staff, for today!!I will make another reservation and visit again. What can I say? This tempura was completely different from what I usually eat. The batter was light and crispy, and the anago (conger eel) was so fluffy that I questioned if it was really anago. Even the uni wrapped in shiso surprised me with its deliciousness, and I'm not even a big fan of uni. For the finale, I recommend the tencha (tempura rice bowl) over the tendon (tempura donburi)!

Mikawa Zezankyo みかわ是山居 1st visit — for many people chef Satome san is to tempura as Jiro Ono is to sushi. In his 70s, Satome san’s style is quite traditional and rustic. Highlights were shirako and anago. To be honest I prefer the lighter and more modern style for tempura but huge respect for the chef. •
