Sushi Hoseki 鮨宝石 — new sushi restaurant located on the 40th floor of Bulgari Hotel, supervised by Fokuoka’s renowned Sushi Gyoten. High ceiling with floor to ceiling windows, spacious counter seating. Unique round shaped nigiri, same vinegar as Gyotan is used for the shari, which is quite powerful. Pretty good sake selection with a wide range of Aramasa labels. Probably the best hotel sushi restaurant so far. •
