Dinner back in March ‘22 at newly Michelin starred Sollip, near London Bridge station. This was my second visit, and while still very good, I couldn’t help thinking that they should consider dialling up the Korean a bit more. They say that the basis of the restaurant’s cuisine stems from European and French training, their time spent in London and the “Korean techniques and ingredients that have shaped their upbringing”.
For me, the most memorable dishes were the strongly Korean influenced ones, the beef tartare, the gamtae sandwich and the hongsam garnish with the lamb. A classical French dish like the fish of the day with sauce Grenobloise, while being perfectly nice, sits very much at odds with the Korean influences present in some of the other dishes. I think they should find a direction and boldly follow that direction, and that direction should be banging, punchy Michelin star refined Korean food. There…. I’ve invented a new genre.
I think they could be a Korean Ikoyi, if that makes any sense.
Anyway, don’t listen to what I’ve got to say, what they are doing had just got them a Michelin star and Harden’s best newcomer award. So clearly they should stick to their current formula rather than take any notice of the ramblings of this idiot.
You should certainly check them out next time you’re in that London.

Lunch at ⭐️⭐️ Ynyshir in Wales. As if anyone needed reminding that Gareth Ward has one of the biggest hearts 💜 in the industry, me and Hayley arrived at Ynyshir the day before this meal in time for our original dinner reservation. We were both feeling mildly unwell in the morning, but had put it down to too much booze the day before. It clearly became apparent that this wasn’t the case when upon our arrival mid-afternoon at Ynyshir, I practically barged past a welcoming Amelia, and with a grimaced “hiya”, duly launched myself into their reception loo to spend some up close and personal time with the porcelain. Thankfully that was the worst of it and as it was only 2pm at that point, we hoped and prayed that a couple of hours Kip and a refreshing shower in their incredible rooms would sort us out for dinner.
Ynyshir is not the kind of place that you want to turn up to and then not be able to eat. It’s out of the way and increasingly difficult to book due to it’s excellence. Plus, the food’s fucking tasty 🤷🏼
We both turned up for dinner with gritted determination. Gareth knows us both pretty well by now, so when the first dish of ‘Not French Onion Soup’ went back only half eaten he instantly texted Hayley from the kitchen (first dishes are served in the bar) asking “are you ok 💜?” Hayley replied honestly that we were both feeling a bit better and didn’t want to turn up and not eat.
Next thing, Lewis came to our table, “Please come out to reception, Gaz would like a word”.
Long story short (or maybe not that short), Gaz sent us both to bed without any tea 😬
He basically told us that we must stay the night and he would cook for us the next day if we were feeling better. Or we could reschedule. Of course no chef wants to cook for guests who aren’t really enjoying the experience and we as diners don’t particularly want to sit through a meal feeling like shit, but there are some restaurants and relationships that are very special and you want to try. Anyway, next day we were maybe not 100% but certainly 90% and able to smash through Ynyshir’s 32 servings, and actually enjoy them

I think that in all honesty L’enclume is now the only three star restaurant in the UK that I am eager to return to. Also, apart from the interesting and delicious food, the service was incredibly slick. Some of the best service I can remember having.
I also visited Aulis in London that week and it was interesting chatting to them about just how @rogan_simon Simon Rogan has built a small empire and managed to keep it going, even thriving through such difficult times. Basically I think that the slickness and attention to detail that I observed last week at L’enclume is mirrored in the way the business is run as a whole. Anyway, ramble over, highly recommended 👌🏻

A fantastic birthday dinner at @heft_high_newton a few weeks ago. We have visited a couple of times now and loved the cooking, service and the beautifully refurbished dining room. Also the bar menu is next level. Highly recommended and a great place to tie in with a trip to the lakes. Can’t wait to go back.

One of the highlights of last year for me was stumbling across @rileysfishshack just a short drive East from Newcastle. We got incredibly lucky with the weather for this time of year. It’s basically a shipping container, on a beach, which has a small kitchen with a wood fired oven and grill. The various catches of the day are cooked and served simply either inside by a log burner on a high table or outside over looking the beach. You can even grab one of the deckchairs and enjoy your meal sat on the sand in the sun. I can’t wait to go back.

Dinner last March at the newly reopened Ledbury. Definitely a very welcome return of this London stalwart after such a long period of uncertainty.
It seems that they inevitably lost the majority of their kitchen brigade. So they had gone (I think) from a brigade of chefs that previously each had between 5 and 10 years experience working with Brett Graham, to essentially a completely new brigade headed by Tom Spenceley formerly of the excellent ⭐️⭐️ Kitchen Table. As expected, the provenance of the ingredients was excellent, from the start, amongst the snacks a pig from Coombeshead Farm to the Cornish crab, to mushrooms grown on the premises to of course the highlight of Brett’s own Sika deer served several ways.
All excellent but I couldn’t help thinking that there was still a little tweaking to do (done and done judging from recent reports👌🏻) I’d love to, and hopefully will, return in 6 months to see where they are at. Long live The Ledbury.

The cooking is at a two star level in my opinion and I wouldn’t be surprised if they gained that second star in the next guide Michelin. Well worth visiting while in London.

Another excellent meal earlier this year at @ikoyi_london ,with excellent company @gastro1 .It’s been nearly 6 years since my first visit to Ikoyi where we terrorised @jeremychanikoyi by turning up with the likes of Gerhard Huber, Margaret Lam , Robert Driscoll and a host of other foodies to enjoy what was a superb lunch during the @oadtop100 week back then. It’s been fantastic to watch the restaurant evolve over those few years and to be rightfully awarded a second Michelin star this year (22’) I’m glad that Michelin are finally starting to recognise delicious food (Ikoyi, Ynyshir, Pine etc) rather than seemingly fixating on white table clothes, snooty soms and whether or not the table was de-crumbed before your pudding.
Jeremy and the team have now moved to a larger site where I’m sure they will be able to truly express themselves without the restrictions of such a small dining room and kitchen. To get two stars out of that tiny kitchen was truly amazing.
